Sambar


Sambar is the combination of lentil and Vegetables with sour and spicy flavour. It is the famous south-Indian dish.

Ingredients 4

4 tbsp Arhar / Toor dal
1/4 cup Carrot cubes
1/4 cup peas
1 medium size Brinjal (egg plant)  cut into cubes
1/4 cup Squash (lauki) cubes
1/4 cup Potato cubes
1/4 cup green bell Pepper
1/4 tsp Turmeric (Haldi)
1 tbsp salt
(you can add more vegetables as per your choice as pumpkin, Zuchini, lotus stem )
 2  cup water
For Gravy

3 Medium size Tomato
2 green chili
small piece ginger
 1 onion (Optional)
2   tbsp Sambar Masala
1 1/2  tbsp Tamarind pulp
Pinch of asafetida
1 tbsp Mustard seed
1 tsp salt
2 tbsp oil
8-10 curry leaves

1 cup water  (or adjust acc to thickness)

Method

Wash and soak the dal for 10 minutes.
In a pressure cooker combine water, dal, vegetables, salt and turmeric. Cook over medium high gas for 15 minutes. Then turn the gas on medium low and cook for 10 minutes more.

Turn off the gas. Lets cool down cooker.
When all steam pass then check veggies are all tender and dal should be mash
Mix everything well.




Now take tomato , onion, green chili and ginger ...Add all in a blender and make purie

Heat oil in a pan. Add Mustard seed, when it cracks then add curry leaves. Stir for seconds.

Add Sambar Masala, salt. Stir for a minute.

 Add Tomato Puree.Stir for 15-20 minutes. Add boiled veggies into puree .Add Tamarind pulp Stir for 8-10 minutes more. (If you think that sambar is going to thick then add water or according to you how much thick u want )


Add Cilantro.  Sambar ready to be serve
Serve with dosa or rice or upma or uttpam......


Tips:- 
If you don't have Tamarind pulp ..you can add Dry Mango Powder tbsp
or 3 Tbsp lemon juice.
Water and sambar masala can adjust according to your taste. How much spicy u want
