Mango- Avocado salad

Mango Avocado salad is healthy and delicious with simple , sweet and sour dressing.


Ingredients

1 -2 Mango
1 Avocado
1 tsp extra virgin olive oil
1/4 tsp salt
1/4 tsp black pepper powder
1 tsp lemon juice
1 tbsp finely chopped cilantro 
1 tbsp finely chopped mint 

Method

Cut mango and avocado into small pieces 

Dressing
Take a bowl add oil , salt , pepper , juice , cilantro , mint and mix well . 

Add dressing into chopped mango n avocado 

Mix well
Salad is ready to serve 






Tip

You can adjust dressing as per your taste
You can add more fruits like pomegranate , banana etc
You can also use parsley

Sunflower pizza



Vegetarian Sunflower pizza without yeast recipe




Ingredients
For dough 

2 cup Maida / All purpose flour
1 1/2 tsp salt
1 1/4 tbsp sugar
1 tsp baking powder
1/2 cup + 1 tbsp warm milk  or as required
2 tbsp butter (melted)
2 tbsp olive oil


For stuffing
1/2 cup finely sliced red bell pepper 
1/2 cup finely sliced yellow bell pepper 
1/2 cup finely sliced  green bell pepper 
1/2 cup finely sliced onion
1 cup pizza sauce 
1 tsp salt
2 tsp Italian herbs  or as required
2 tsp oregano or as required
1 tsp chili flakes or as required
Mozzarella cheese as required

Oil to brush

Method :-

In a bowl
Sieve the flour, add baking powder, sugar and salt. Mix well. Then add butter and oil and mix together.
Now add the milk gradually while kneading the dough . Knead the dough for 4-5 minutes or  until it become soft and nice.
Touch a bit of oil with your fingers and apply all over the dough.



Cover the dough and Keep it aside for an hour .

Take another bowl or plate or tray . Add all sliced vegetables , add salt, oregano, Italian herbs and chili flakes. Mix well.


Now take the dough , knead it for few seconds.
Now roll the dough with the rolling pin on the wooden board into a round shape circle to 1/4 inch thickness.



Now preheat the oven to 400 F

Now take baking tray and line it with Foil paper / parchment paper.
Transfer the rolled dough carefully to the prepared tray ( I forget to transfer the dough in this step  :( )

Now make circle in center of pizza and slits in the center by using pizza cutter as shown.
Cut 8 equal triangle (like we cut a pizza) in inner circle.

Apply a generous amount of pizza sauce on all around the outer circle border as shown in pic




Now top with veggie filling on tomato sauce and garnish with mozeralla cheese as shown in pic


Take each cut triangle from the inner circle and fold it over the arrange vegetables and tuck the tip of triangle into outer border. Follow and do the same procedure with every triangle to get a sunflower shape.

Brush the dough with oil/ milk/butter

Bake in oven for 25 minutes or until it get brown in color.










Veggie sunflower pizza is ready to eat. Transfer it into serving plate.


Tips:-

1) Kneading dough is important step. More kneading gives soft dough
2) You can add more vegetables like olives, spinach etc.
3) Also can add Tofu, paneer etc.
4) Adjust the italian herbs as per your taste
5) Oven timing can be different just keep eye on the pizza after 20 minutes.

Spinach dip with corn flour pancake


Different version of Sarson ka Saag & Makke ki Roti


Presenting the spinach dip with spicy cornflour pancake which is a is a twisted version of Sarson ka Saag & Makke ki Roti. Sarson ka Saag is very famous but a seasonal dish thus I have tried to provide the slightly different flavor which is available every time of the year but is equally tasty and delicious.  


Ingredients 

Spinach dip

A bunch of Spinach
1 cup Radish leaves
A bunch of Methi leaves
1 Green chili
A piece of small Ginger 
1 -2 Tomato
1 finely chopped Onion
1/2 tsp Red chili powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
1 tbsp Oil/ butter/ghee
Salt to taste
1/4 cup cream 
Lemon juice



Corn flour pancake

3/4 cup corn flour
Around 3/4 cup water
1/2 tsp baking powder
1/2 tsp Red chili powder
1/2 tsp Turmeric powder
1/2 tsp coriander powder
A pinch of Hing (Optional)
Salt  to taste


oil/ghee to make pancakes

Method 

Wash the spinach, radish green leaves and methi leaves gently.
Take a pan . Add half cup water in the pan and boil it. Add Spinach , methi and radish leaves.
Add roughly chopped green chili, ginger and tomato.
 Boil it for 3-4  minutes.
Turn off the gas.

Keep it aside for cool down.
Now Blend the mixture in a blender and make puree.

Heat oil in a pan. Add all spices except salt . Stir it for few seconds.
Add onion. Stir it for 1-2 minutes. Add puree cook it for 3-4 minutes . Add cream.
cook it for 2-3 minutes more.  Add salt . cook for 1-2 minutes more.
Turn off the gas. Add lemon juice , mix well and cover with lid.




       





Cornflour pancake


Take a bowl Add water , corn flour, spices, baking powder and mix well. Make batter. Batter consistency should like dosa batter

Heat a skillet or pan.
take a big Spoonful of batter and spread it in small size. Drop some oil and cook it on medium high gas for 2-3 minutes then flip with the help of spatula and cook it again for 3-4 minutes. Corn flour pan cake are ready

              







Tips :-
1) You can add other green leaves like kale, parsley etc.
2)  You can adjust spices as per your taste
3)  You can also add paneer for increase the taste.
