Vegetable Pasta Soup

Vegetable Pasta Soup is a healthy soup...
Great combination of vegetables , pasta and Italian spices...
Kid friendly soup.
This soup is helpful in weight loss.

Enjoy soup with many flavors.

 




Ingredients 

1 1/2 cup boiled multi grain pasta (You can use any pasta)

(Vegetables of your choice)
1 cup finely chopped carrots
3/4 cup finely chopped green bell pepper
3/4 cup finely chopped red bell pepper
1/2 cup finely chopped celery
1 medium size finely chopped onion
2 chopped tomatoes
4-5 basil leaves

salt to taste
1/2 tsp oregano
1/2 tsp black pepper
1 tsp olive oil
1 tsp lemon juice
2 cup water


Method 

Heat oil in a pan
Add celery , onion, bell pepper and onion. Stir it for 3-4 minutes on medium high gas.
Add salt .












Now add tomatoes and stir it for 2-3 minutes or until tomatoes become mushy.
Add boiled pasta...Mix well.
Add 2 cup water . Cook it for 6-7 minutes on medium gas.
 
Add oregano , black pepper and mix well.
cook it for 2 minutes.
Turn off the gas. Add lemon juice and basil
Serve hot with croutons . Garnish with basil leaves










Note:-
Adjust quantity of water as per your taste.
You can add vegetables of your choice.
Any type of pasta, noodles or spaghetti , you can use in this soup.

Vegetable crunchy salad with homemade Vinaigrette dressing


Vegetable Crunchy Salad .........






This is a flavorful and crunchy vegetable salad tossed with peanuts and home made vinaigrette dressing.

Sour and sweet taste make this salad very delicious...

Vinaigrette dressing
Vinaigrette is the french word ..this dressing is made by mixing an oil and something acidic such as vinegar and lemon juice.
In this dressing we can use many types of vinegar like  red white vinegar, white wine vinegar, Baslamic vinegar etc.

For dressing :-  I am using red wine vinegar , extra virgin olive oil, lemon juice , salt and black pepper




For Salad.....lots of vegetables as red bell pepper, green bell pepper, yellow bell pepper, tomatoes, green leaves, 

For sweetness, I am using orange chunks....it  help to enhance the flavor of salad.

Of course peanuts for crunchy texture....(You can add croutons for more crunch)




It is very healthy and filling salad.
Its really help in weight loss .


Try this colorful, healthy and delicious salad.....






(As per your choice and your taste , you can adjust the quantity of salad and dressing ingredients)


Ingredients

2-3 cup of salad  green leaves
1 cup of cherry tomatoes (or any tomatoes)
1 cup of chopped green bell pepper

1 cup of chopped green bell pepper

1 cup of chopped Yellow bell pepper
1 cup of chopped Red bell pepper
2-3 Oranges
3/4 cup roasted peanuts

For dressing

3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
salt to taste
1/2 tsp black pepper powder
1/2 tsp dried oregano
1/4 tsp sugar 


Method


Dressing

  1. Whisk the vinegar, sugar, salt ,oregano and pepper together in a small bowl. Whisking constantly, add the oil in a slow, steady stream and continue whisking until thickened.



In a large bowl ,

add all ingredients of salad
 and mix well.

Add dressing and mix gently.

Keep it aside for 30 minutes.

Eat healthy salad :)
