Imarti is a sweet from India. It is made by deep-frying Urad dal batter in a circular flower shape, then soaking in sugar syrup. Alternative names include Amriti, Emarti, Omritti, Amitti, Jahangir and Jhangiri/Jaangiri.
I am giving here very simple recipe , so you can make easily at home .
Soft and crispy Imarti .
Ingredients
1/2 cup white urad dal
1/4 tsp baking powder
Ghee/Oil for frying
A pinch of orange food color
1/4 cup + 2tbsp water
A pinch of caradmom
1 cup sugar + 1/2 cup water for sugar syrup
Method :-
Washed and soaked Urad dal for two hours .
Drain well and transfer it into grinder/mixer.
add 1/4 cup water or as required and make batter(only add required water to make smooth batter)
Add baking powder and orange color and mix well.
TAke out on the big bowl/plate.
whisk the batter for 2-3 minutes , then the batter become fluffy.
For check that batter is ready or not,
Take a small ball in the water, it should float.

Transfer all the batter in the piping bag.
now prepare sugar syrup
in a sauce pan, add 1 cup sugar and 1/2 cup water.
Boil it until sugar dissolve and sugar syrup become little thick.
we don't need any string consistency.
.Keep it aside.
Now heat oil/ghee on medium gas.
For frying imarti, oil should be medium hot.
Now with the help of piping bag , make imarti shape.
Pipe the imartis into the ghee/oil once it’s mildly hot. Make sure ghee is not super hot else you won’t be able to pipe the batter, keep the heat at medium-low. Make one round with the batter and then start making small circles adjacent to one another on top of that round that you first made. [See video )
Once you have piped the batter, increase heat to medium and fry till crisp from both sides. Once fried, take out the imarti, shaking off the excess ghee/oil
Dip the fried imarti in the sugar syrup for few seconds. Remember the sugar syrup should be warm at this point.
Flip the imarti to dip the other side in the sugar syrup too.
Remove from the sugar syrup and transfer to a baking sheet lined with parchment paper or silicone mat.
Enjoy hot Imarti .
You can eat imarti with curd/yogurt or warm milk .
Garnish with some chopped almonds/pistachios.
