Stuffed Potato with gravy

Stuffed Potato gravy also known as dum aloo. It is combination of spice and sweet. It can be eaten with any type of bread or rice.




For 2-3 person
Ingredients:-

2 Large Half-boiled Potato

For stuffing Potato

1 1/2 tbsp coconut
5-6 raisins finely chopped
3-4 cashews finely chopped
a pinch of cardamom powder
3 tbsp crumbled paneer
2 tbsp crumbled khoya
A pinch of hing
1/4 tsp redchilli powder
1/2 tsp salt


For Gravy

3 Tomato
1 onion
2-3 Green chili
small piece of ginger
2 clove
3-4 Black pepper
1 Black cardamom
1 cinnamon stick
1/2 tsp cumin seeds
1 cup milk  (or cream)
1 /2 cup water
pinch of green cardamom powder
1 tbsp salt
1/2 tsp Garam Masala
1 tbsp sugar
finely chopped cilantro
1 tbsp oil

Method:-

Cut the pieces tomato , onion, green chili and ginger into small pieces.
Take a pan or wok. heat 1 tbsp oil in a pan. Add cumin seeds, cinnamon stick, cardamom, cloves, blackpepper. stir for1 minutes . Add onion, tomto, green chili, ginger. Add 1/4 cup water and boil then for 15 minutes. After 15 minutes Turn off the gas . Keep it aside.



Mean while , will prepare Potato
We have two ways to make it .
First healthy and second is non-heallthy.

In healthy way,

We need to boil Potato . Potato should not be too much boiled otherwise it won't work.
Potao shuld be half boiled. (You can also boil potato in microwave. It is the easier method ..In microwave , you can put potato for 6 -8 minutes for boil).

Cut the Potato into middle and divide into two parts


We need to stuff the potato, so With the help of knife or spoon of fork , take potato out and keep it aside for stuffing. Now, We have a space in potato to fill the stuffing.

prepare the stuffing,

Mix paneer, khoya, coconutpowder, cashews, raisins,salt, red pepper,cardamom powder, hing and left over potato (which we kept for stuffing). Mix well Now stuffing is ready .


Fill the stuffing in potato and press gently with the hand.

Blend the tomato puree in a blender. (use little bit water to smooth puriee)
Take a wok or pan (or use same pan).
Heat 1 tbsp oil in a pan . Add puree. Stir for 10 minutes. Then add milk and water. stir for 10 minutes more. Add cardamom powder, salt, garam masala and sugar. Mix well. stir for two minutes more . (Water or milk can be added more or less as per thickness of gravy).

Add the stuffed potato stir for 5 minutes more but on medim low gas.

Garnish with Cilantro

Other non-healthy way ....
You can take baby potatoes or medium size potato. Peel it and Prick with the help of fork on the potato and deep fry the potato on medium gas .( Don't deep fry on high gas otherwise it will beome brown in color rapidly but won't cook from inside).
It will take around 15-20 minutes.

Or you can do ...first boil the baby potatoes half and then peel and prick with the help of fork and deep fry .

Then same procedure cut the potato in two piece or if you are using baby potato so don't need to cut and can use full potato.



Add into gravy

....

I have used above three procedure.

Every way have their own taste.
So enjoy .....with your way :)


Tips:-

Salt and spices and sugar can adjust.
You can add cashews paste to make thick gravy. Add cream.
