Veg Thai Fried Rice


Thai Fried Rice.....


Ingredients:-

2 cup cooked rice
2 tbsp coconut milk
1 tbsp red curry paste (or green paste)
1/2 tbsp soy sauce
1 tsp salt
1/4 tsp sugar
1/2 cup sliced onion
1/4 cup green pepper
1/4 cup cabbage
1/4 cup carrot
1 cup Tofu cubes
finely chopped cilantro
1/4 cup basil leaves
1 tbsp oil
spring onions
1 tsp Lemon juice


Method:-

Cut the vegetables into slices or cubes (as per choice)


Heat oil in a pan. Add Onion stir fry for 2 minutes. Add vegetables and stir fry for 5 minutes.(Stir vegetables on high gas)
 



(Vegetables should not be tender)

Add basil leaves,  rice, sugar, salt , red curry paste and soy sauce. Mix well. Stir for 2-3 minutes more.
Add coconut milkand mix well add tofu and covered with the lid and cook for 5 minutes more on medium low gas.
Turn off the gas. Add lemon juice, spring onion. Mix well. Garnish with cilantro.







Tips:-
This recipe can me make with leftover rice..so best use of left over rice.
Vegetables can be of your choice. 
Chili, sugar, and salt can adjust according to taste.
