Veg Thai Red curry

Thai red curry is the combination of spice, sweet and lots of vegetables.
It is easy to make.






Ingredients:-

1 can coconut milk (Around 13 oz)
2 1/2 tbsp red curry paste
1/2 tbsp soya sauce
1 tsp salt
1/4 tsp kashmiri red chili powder (optional)
1 1/2 tsp sugar
1/2 cup sliced onion
1/4 cup green pepper
1/4 cup cabbage
1/4 cup carrot
1 cup Tofu cubes
finely chopped cilantro
1/4 cup basil leaves
1 teaspoon green chili and ginger paste
1 tbsp oil
spring onions
1 tsp Lemon juice
1/ cup water

Method:-

Cut the vegetables into slices or cubes (as per choice)


Heat oil in a pan. Add Onion stir fry for 2 minutes. Add vegetables and stir fry for 2-3 minutes.(Stir on high gas ...vegetables should not be tender)

 



Heat oil in a wok or other Pan. Add chili paste. stir for  few seconds. Add Red curry paste.
 











Stir for a minute.  Add coconut milk . Mix well  and cook it for 8-10 minutes.

Add soya sauce. Add salt , sugar and red chili powder. Add water. Mix well stir for 2 minutes. Add Vegetables , tofu and basil leaves . cook for 4-5 minutes.









Turn the gas off. Add lemon juice. Add cilantro and spring onions.


Thai red curry is ready to be serve. Serve it with steamed rice or normal rice or fried rice.


Tips:-
You can add more vegetables like Peas, french beans, baby corn, yellow bell pepper, green pepper, mushrooms,etc.

Adjust red curry paste , sugar and salt according to your taste.
Vegetables should not be tender while stirring.
