Eggless Mango Swiss roll with ice-cream

A swiss roll is a type of sponge cake rolled with whipping cream, Jam or icing.

Here I am giving recipe of  Egg-less Mango Swiss roll with ice-cream .

It is simple recipe with simple ingredients but with some tips & tricks.






Ingredients


1 cup Flour
1/2 tsp Baking soda
1 tsp Baking powder
4 tbsp powdered Sugar
A pinch of salt



2 tbsp oil
2 tbsp Butter
150 gm Sweetened Condensed milk
1 cup Mango puree
1/2 cup luke warm milk
1-2 drop of Vanilla essence
1-2 drop of food color (optional)


Ice-cream

For Garnishing
Chocolate Syrup
Strawberry syrup



Method

Preheat oven at 350 C
 Prepare the tray  with parchment paper.
In a bowl,

Add oil, Butter, powdered sugar & Condensed milk   . Whisk for 5-6 minutes or until it become creamy.
Add Mango puree , vanilla essence and food color and whisk for 2 minutes.

In another bowl, Sieve flour, baking soda, salt and baking powder together and mix well.





Now Add this dry mixture into wet mixture and whisk .
Add milk and mix  well.
Use fold and cut method .

This mixture become little watery
For this recipe we need little watery batter.


 Now pour the batter in the tray .. and tap it 4-5 times to get rid of air bubbles.
Place the tray in oven for 12- 15 minutes.

 






 
in the mean time,Take out icecream from freezer  so it will come at room temperature.

Check after 12 minutes, insert the tooth pic , if its clean then cake is ready.

Take it out from the oven. and keep it aside for 2 minutes.
Then take some butter paper/parchment paper and place over the cake.

Now we will grab from the sides and flip it over  .
Now remove the parchment paper from the bottom.
( Be careful because cake is hot)

   



Now wait for 5 minutes, so cake will become on room temperature, so its easy to handle.

Before going on next step , cut the sides of cake about 1 cm.
This is very important step , sometimes the sides over cooked, so when you roll the cake it can be break.


Now sprinkle some sugar syrup over the cake.

Now apply ice-cream over the cake .

its depend on you ,you can spread ice-cream how much you want.

Spread the ice-cream evenly.

Now we will roll it,
Start rolling carefully with the help of parchment paper towards the end.
   




Now Roll it with the parchment paper and keep it in the freezer for 1-2 hour.





Now take it out and cut the slices.










Garnish with Chocolate syrup & Strawberry syrup.
Serve cold Eggless Mango ice-cream swiss roll.




Tips:-

1) I am using here olive oil ..you can use any oil
2) You can use any flavoured ice-cream
3) You can use chocolate frosting, jam, whipping cream etc.

Patties from leftover dry Carrot Peas Potato sabji

I really love to make something from leftovers..
So here is one more Cutlets/Kebabs/Patties from left overs.

Carrot Peas Cutlets...

I always like to make something from left overs since I don't like wasting.
I make Carrot, peas and potatoes dry sabji for lunch...Now its left so what next..
Definitely we want something for tea time..
so lets make Carrot cutlets from left overs...

Serve hot with green chutney and sweet chutney and of course tea :)

Ingredients :-


11/2 cup Carrot peas sabji
1 tbsp chaat masala/kitchen king masala/Maggi masala

3 tbsp corn starch
2 Bread slices 
 Salt to taste
Oil for greasing and cooking
1 tsp green chili paste
2 tbsp Sesame seed









Method :-

Take all your left over sabji in the big bowl or any plate.



Now Mash it with masher and add 2 bread (finely crushed) and 3 tbsp corn Starch.
Add salt,  Chaat masala/Maggi masala/kitchen king masala and green chili paste.

Mix well everything..If you feel that mixture has still some moisture, so you can add more bread crumbs.

Mix well and make dough. Keep this dough for 20 minutes in the fridge.
Take out dough and break into small equal parts.

Grease hand with oil and make patties as per your desire shape.
Coat with sesame  seeds.(Its optional)


Heat the pan. Add 2 tbsp oil..

If pan medium heat then keep the patties/kebabs and cook it on medium gas for 4-5 minutes. Then flip the patties/kebabs and cook it more 4-5 minutes more and flip it again and again until they cooked brown in color and crispy from both sides.
* Sprinkle some oil as needed.














Serve with green chutney or Sweet chutney or ketchup.

  Tip :-

1) You can make these cutlets from any left over dry sabji.
2) You can also make from fresh boiled vegetables
3) You can adjust spices as per your taste.
4) You can add some besan, more potato , breadcrumbs for binding cutlets.
5) You can also deep fry these cutlets .
6) Before cooking cutlets, you can keep the raw cutlets in the fridge  for 30 minutes...
It will be easy in deep frying and shallow frying.
