Cheese/Vegetable Dosa pizza








Pizza time....
Everyone's favourite pizza with some twist and healthy manner

When you have leftover dosa batter , and your family wants to eat pizza, then why don't you try this dosa pizza for your family

No yeast, no preservatives, healthy and yummy pizza

Here one cheese dosa pizza and second one vegetable dosa pizza

For 2 pizza
Ingredients:-

3/4 tsp Baking powder
Dosa batter 2 cup or as required
Pizza sauce (as required)
Black pepper (for sprinkle)
salt(for sprinkle)
Oregano(for sprinkle)
Cheese
red chili flakes
Italian herbs


 Stuffed Veg Pizza



For vegetable pizza

1 cup chopped Spinach
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup boiled or frozen peas
1/4 cup finely chopped cilantro
1 medium size chopped onion
1/4 cup grated carrot


Cheese
Oregano
salt
Black pepper
red chili flakes
Italian herb

Oil





Method:-

Cheese Dosa Pizza


In a bowl , add dosa batter and baking powder , add salt (if you didn't mix before) and mix well...
Take a pan and heat up..
Grease the pan with butter/oil

Pour one and half ladle on the pan, (it will depend on how much thick base do you want?)
Covered with lid and cooked it on medium gas for 3-4  minutes....
It will become light brown (as in pic) .
Now flip and Turn off the gas. Sprinkle some oil and spread Pizza sauce over the pizza
and then add grated cheese.
Cover with lid and cooked it on 5-6 minutes on low medium gas (It will give you crust base)

Now sprinkle black pepper, Italian herbs, oregano, red chili flakes (It's all your choice )
Now Cheese dosa pizza is ready ...cut into 4 slices or 8 slices

Vegetable Dosa pizza


For vegetable dosa , in another bowl , add all finely chopped vegetables, dosa batter, baking powder and salt together, (Add little water or as required) and make smooth batter consistency....

Take a pan , heat up.


Grease the pan with oil/butter/ghee
 Pour one and half ladle on the pan, (it will depend on how much thick base do you want?)
spread one tsp oil and covered with lid and cooked it on medium gas for 3-4  minutes....
it will become light brown (as in pic) .
Now flip and spread the pizza sauce and grated cheese.
Cover with lid and cooked it on 6-7 minutes on low medium gas (It will give you crust base)

Now sprinkle black pepper, Italian herbs, oregano, red chili flakes (It's all your choice )
Now Cheese dosa pizza is ready ...cut into 4 slices or 8 slices


              






Enjoy hot, healthy and ofcourse yummy pizza :)



Tip :-

1) You can make this pizza with any type of pancake batter (Sooji pancake batter, Gramflour pancake , Rice flour etc.....)

2) You can use any type or herbs of your choice..

3) If you want to  use any vegetables as topping, just add with the cheese and cook it .

Pakode ki Sabji (Fritters in Curd Tomato Gravy)

If we have left overs Pakode , and we don't want to eat again .....definitely we don't want to waste ....so what we have option...
Here is the one option Pakode ki sabji which can be complete main course .

So let 's make yummy and delicious dish with left overs pakoda and few ingredients which are very easily available at your place.


You can make this dish with any type of pakode (bread pakode, aloo, spinach, onion, eggplant, cauliflower etc............)

Even you can make this recipe with fresh pakodas as well....
Enjoy this dish with any paranthas, chapati or rice....






For 2-3 People

Ingredients :-

Some left over pakode

For curry,

Two tomatoes
1 green chili
1" ginger piece

1 finely chopped onion
3/4 cup whisked curd (yogurt)

1 cup water

salt to taste
1 tsp cumin seeds
A pinch of Asafoetida(hing)
1/4 tsp red chili powder
1/2 tsp coriander powder
1/2 tsp Garam masala powder
some finely chopped cilantro

1 tbsp oil

Method :-

In a blender, add tomato, green chili and ginger and make puree.

In a pan heat one tbsp of oil , add cumin seeds, when it cracks then add hing, chopped onion, stir it add all spices except salt.....

stir it for 2-3 minutes.





When onion cooked , then add puree and stir for 4-5 minutes on medium gas.

Now add curd and mix well .....stir for 2-3 minutes , add water ...
 and cooked it for more 4-5 minutes.
Add salt and cooked it for more 2-3 minutes on medium gas






Add pakodas in curry and cook it 2-3 minutes more....(I have some cauliflower pakode, some spinach-onion and some potato pakode)


  
garnish with cilantro ...

Serve hot with chapati or paranth or rice......





















Tips:- 

1) You can adjust spices as per your taste
2) You can adjust quantity of water as per desire consistency.

Veg Poha lollipop

Veg Poha Lollipop.




its a great snack not only for kids but also for everyone.......
Its a combination of poha and vegetables ....
A great way of eating vegetables ......
You can enjoy this snack at any time or any parties which does not only looks tempting but also taste awesome......



(You can adjust the quantity of vegetables and spices as per your taste)
Ingredients :-

1 cup poha (Soaked and drained )
1 boiled peeled and mashed potato
1/2 cup boiled and mashed carrots
1/2 cup boiled and mashed peas
1/4 cup finely chopped cilantro
1 tsp green chili
1/2 tsp ginger paste
1/2 tbsp salt
1/2 tsp red chili powder
1/2 tsp coriander powder
1/2 tsp garam masala
1 tsp chaat masala
1/2 tsp mango powder

Corn starch for binding and coating
chaat masala for sprinkle
some lollipop sticks

Oil for deep frying

Method :-

Soaked your lollipop stick into water and  dry it  .

In a bowl  soaked and drained poha..keep it for 5 minutes...
Now in another bowl, add poha, all veggies and spices mix together.

Add 3 tbsp cornstarch and mix well.
  

Now grease your hand with oil and make small balls and give them round shape....


Insert the one stick into one ball, and sealed properly.
Repeat with every ball.. and make lollipop...

Now keep these lollipop into refrigerator for 30 minutes.

After 30 minutes..
Heat oil in a pan for deep fry

When oil is medium hot then put lollipop into oil and fry them until it become golden in color and crispy...
(If you see the vegetable ball is spreading in the oil , then coat balls with the corn starch and then deep fry them )

  







Serve hot with green chutney or sweet chutney



Tips:-

You can add vegetables of your choice like onion, cauliflower, cabbage, bell pepper etc.
You can add corn , paneer, cheese etc.
Deep fry on medium gas...

Besan Modak(Gram flour modak)

Ganpati Bappa Moriya🙏🙏

On the auspicious day of Ganesh chathurthi try this besan modak which is easy to make and delicious in taste ....







Ingredients 

2 cup besan( gram flour)
3/4 cup Ghee
1/4 cup almond powder
1/2 tsp cardamom powder
1 cup powdered Sugar


For garnishing 
Some chopped pistachio and almonds



Method 

Heat ghee in pan/kadai...
Add besan and roast it until it become golden brown on medium gas 
Stir it continuously , make sure besan should not burn




When it become brown in color then add Almond powder and stir it for 2-3 minutes more on medium gas








Once its get done then remove from the gas and stir continuously for few seconds (since pan is also hot and besan can burn)

either you can take out besan from pan

Keep it aside for cool...


When it comes to room temperature then add powdered sugar and cardamom powder and mix well.


If you have modak mould  then grease mould with ghee, fill the mould with enough mixture and seal the opening of the mould. Open and remove modak carefully

Otherwise try to give shape with  your hands or you can give round ball shape
(Since I don't have moduk mould , i try to give modak shape with my hands)

Garnish with some almonds and pistachio...
(As per your taste , you can add cashews and raisins)

Sooji dhokla/Rava dhokla

Sooji dhokla is a soft, spongy and delicious dhokla which is easy to make .
Everyone likes it...For toddler this is a great dhokla recipe ....

Neither grinding nor fermenting required...







Ingredients

1 cup Sooji(Semolina)
3/4 cup curd (yogurt)
1 tsp salt or as taste
1/2 tsp sugar
1 tbsp eno
1/4 cup luke warm water
1/4 tsp black pepper powder
1/4 tsp red chili powder

For tempering

11/2 tbsp oil
1 tsp mustard seeds

For garnishing

Some finely chopped cilantro




Method

In a bowl ,mix luke warm water and curd together
In another bowl , add semolina , salt and sugar. Mix well.
Add yogurt mixture in to sooji mixture and mix gently.

Now prepare steamer and grease the container

When steamer is ready,

Then add eno into sooji batter.
Mix and whisk well. Quickly pour the batter in a greased container.
Sprinkle red chili powder and black pepper powder.
Put the container in steamer and steam for 15 minutes.

Now turn off the gas.
After 5 minutes take out the container from the steamer.


Now prepare tempering,
heat oil in a pan, add mustard seeds. when it cracks then turn off the gas.
Pour the tempering oil over the dhokla...

Garnish with chopped cilantro....

Let it be cool for sometime

Dhokla is ready . Serve with green chutney.



Note:-

1)You can add green chili in tempering
2) You can garnish with  coconut flakes as well.

Sabudana vada (Crispy Sago fritters) in Airfryer

Healthy healthy healthy and Of course yummy.............

Sabudana vada is a very light and crispy vada from outer and soft from inside.....
Basically Sabudana preferred during fasting days like Navratri, Janmasthmi , Shivratri, ekadshi etc......

No oil...
These vadas are so yummy, you don't need to wait for fasting days to eat these vadas............






So enjoy healthy version of sabudana vada

Ingredients


1/2 cup Sabudana
1 medium size boiled potato
1/2 cup roasted peanut
salt to taste
1/2 tsp black pepper
1 tsp green chili paste
1/2 tsp ginger paste

some finely chopped cilantro

oil/ghee for greasing




Method 


Preparation

Washed and soaked Sabudana for 4-5 hrs and drained completely.
Grind peanuts in grinder and make coarsely powder
Peeled and mashed the boiled potato

Cooking

Now, In a bowl add sabudana and mash it properly.
Add potato, peanut powder, salt, green chili and ginger paste, cilantro and black pepper.
Mix and mash well.
Grease your hand and make balls and give them as desire shape.

 





Now main part :)

Airfryer Time

(Every Airfryer time can vary)

Now Preheat Airfryer on 180 F for 5 minutes.
Then place some foil paper and grease it with the oil
(Otherwise vadas can stick)

Then place the vadas in Airfryer on 150 F for 10 minutes.
Turn vadas and keep it on 160 F for 8-10 minutes.

Grease lightly with oil from both side
then set the temperature on 180 F for 5-6 minutes (for both side).

Sabudana vadas become light brown in color and crispy from outer and soft from inside...



So enjoy Hot and Healthy Sabudana vadas with green chutney /yogurt(curd)









Tips :-

1) Sabudana should be washed properly (3-4 times with the water)
2) Sabudana should be soaked properly (4-5 hrs)
3) Sabudana should be drained properly..otherwise vadas become sticky...
(For drained well...keep the sabudana in drainer for 15-20 minutes).

4) If you feel that vada mixture is sticky, you can add more peanut powder or potato or kuttu/Rajgira flour.
