Apple ladoo / Apple balls


If you have some left over apples in your fruit basket and you are in mood to try some yummy ladoos then try out this unique Apple Ladoos recipe which is very yummy and easy to make.
Kids friendly .

This is very easy and quick recipe.
 

 


Ingredients

11/2 cup roughly chopped apple
1 1/4 cup sugar
1 cup dry coconut powder
Some chopped/coarsely dryfruits(Almonds, pistachios, Cashews, walnuts as per your choice)
A pinch of Cardamom powder 
For garnishing some chopped Dryfruits and dessicated coconut


Method :-

In a pressure cooker,  boil apple on medium gas until one whistle come.




In a pan , add 3 tbsp ghee and add coconut powder and roast for few seconds .
Add Sugar and boiled apple and Mix well.
 Cook and Stir continuously until all mixture become dry.

Add some coarsely dry fruits powder and cardamom powder.
Mix well and cooking continuously until it started leaving sides and mixture become mass. At this moment you can taste Sugar, if you want more you can add more
 Turn off the heat and transfer it to the plate


Now Grease hand  and make ladoo
and Garnish with dry fruits and coconut powder or desiccated coconut.

Moong dal barfi







Moong dal Barfi is the most relished barfi. .
Traditionally, Moong dal barfi makes with the mawa(Khoya) and time consuming.
But sometime Khoya is not easy to find everywhere .
So Here I am making this with Moong dal barfi with some twist  which is easy to make and less time consuming.

so Make  this yummylicious Moong dal barfi on this Diwali .

No preservatives, no food color , healthy sweet.

Ingredients 

3/4 cup Moong dal
1 tin Sweetend condensed milk
5 tbsp Ghee
1/2 cup milk
2-3 tbsp sugar(Adjust as per your taste)
Chopped dry fruits for garnishing
4-5 saffron leaves
1/2 tsp cardamom powder



Method


Soak dal for 2 hrs.

Then drain and boiled dal in pressure cooker with water only for two whistle on low flame/heat/gas.

Now take a pan. Add 5 tbsp ghee and add boiled dal and stir it for 12-15 minutes or until it become light brown in color on medium- high gas.

Stir continuously otherwise dal might get burnt

Add milk and saffron and stir it for few more minutes.
Add condensed milk , sugar and mix it and stir it for few more minutes. or until it become dry . Add Some chopped dry fruits and cardamom powder. Turn off the gas.

Now greased the tray/thali  and transfer this whole mixture to the greased tray and spread it around .

Garnish with some coarsely  dry fruit powder.
Allow it cool completely . Cut into desire shapes.

Enjoy yummy sweets on festivals and share it with your family and friends.


Note :-

1) If you think the mixture is watery is not able to set in barfi shape, then add some coconut powder and mix. then make barfi.

2) You can adjust sweetness of barfi as per your taste.
3) You can use sliver or golden barak for garnishing.

Almond barfi/fudge (Badam burfi)


Almond burfi is a rich and healthy sweet burfi made from almond, ghee and condensed milk.












Ingredients 


11/2 cup Almonds
300 gm Sweetend condensed milk
A pinch of cardamom
2 cup milk
2 1/2 tbsp ghee




 Method :-

Boil the  3 cup of water and soaked Almonds for 10 minutes. Turn off the gas and keep almonds in boiled water for an hour.
After an hour peel the almonds and grind them with the help of 2 cup milk and make fine paste.
(Add milk gradually )

Turn on the gas
Now take pan, 
add ghee ,  Add Almond paste and mix well. 
Add condensed milk and mix well and cook it on high flame  for 12-15 minutes or until it become thick and dense in consistency.

 (Stir continuously  otherwise it might be burn )








  

Now grease parchment paper ..

When mixture gets thick, take it out in a plate and allow it to cool. When mixture gets bit frigid, grease your hands with some ghee and on the mixture. Knead the mixture until smooth.





Now take mixture and Place it over butter paper. Press with hand and flatten. Cover with other parchment paper. Now with help of rolling pin, press gently and roll it. As per your choice, you can keep it thick or thin. Keep it as it for 10-15 minutes to set.
Mixture is set, now with help of pizza cutter or knife cut into pieces with any shape or size as per your preference. Place the pieces in a plate. Almonds barfi is ready.

Serve and enjoy and share it with your friends and family.

Carrot Halwa


Carrot halwa is a very delicious dessert which made with grated carrots,Condensed milk and dry fruits. It's a winter delight. A North Indian marriages are not complete without carrot halwa in dessert especially in winters.


Here is a simple recipe  of making carrot halwa.
I am making this recipe in pressure cooker ... here I am making halwa with Sweetend condensed milk ...
Enjoy this recipe.





 


 Ingredients 

5 lb Carrot
Sweetened Condensed milk 48 oz
1/2 tsp Cardamom powder
as per needed Chopped almonds, cashews, raisins

6-8  tbsp ghee


For Garnishing some dry fruits




Method :-


 Wash, peel and grate the carrots
 Take the grated carrot  in a pressure cooker  and close the lid and cook it on low gas for 20-25 minutes.







When the pressure settle down on its own , remove the lid.
Add condensed milk , ghee and some chopped nuts. and mix well.
Cook it on medium gas to high gas until the mixture become thick  . Stir mixture continuously otherwise carrot might be burnt.  .


It will take around 15- 20 minutes.
 Add cardamom powder  and mix well.

Garnish with some chopped dry fruits









Serve hot and cold .

Note :-

1) You can keep carrot halwa in fridge for long time and serve hot and cold.
2) You can adjust the quantity of dry fruits as per your choice.
3) If you want more sweetness , you can add more sugar .

Since Diwali is around the corner..

Carrot ladoo is very easy recipe for Diwali .
I am making this carrot ladoo recipe by using carrots, condensed milk and nuts.
Here I am giving very simple recipe






 


Ingredients

Silver vark (optional)

Mini Balushahi








Balushahi is a very famous dessert.... It is crunchy and flaky from outside and soft from inside...

The delicious and mouthwatering Mini Balushahi is a famous dish of Indian and is very much popular in the whole worldwide. This dish is often reserved for any special occasion like parties or festivals. Mini Balushahi is the best option for you when you want to eat or cook something really perfect. It is an amazing dish which is liked by the people of every age group. The flavorful and saporous ingredients are the key to the amazing taste of Mini Balushahi


Ingredients :-


For dough
1 cup all purpose flour
1/4 tsp baking soda
2 tbsp curd
2 tbsp ghee

For sugar syrup


1 cup sugar
3/4 cup water
A pinch of cardamom

some finely chopped pistachios

Ghee for deep fry


Method :-

In a bowl, seive the Maida and banking soda together..
Add ghee and mix well (It will like bread crumb consistency)



Add curd and mix well.
Add water and make medium soft dough. Cover it with damp clothe and keep it for 40 minutes.
      

   
Now heat oil/ghee in a pan for deep fry...

Divide the dough into equal small parts,  make the balls and using your thumb make a make a slight dent in the center of the ball..


When the oil is medium hot then add balls into oil and fry it gently from both sides.
Entire process may take around 20 minutes . Remove it and keep it on absorbent paper.

(Fry it on low-medium gas, so it can be cooked from inside)


Now prepare sugar syrup,
Cook the sugar with water in a pan, stirring occasionally, till the sugar dissolves. Add cardamo powder. Continue to cook till syrup till  one string consistency.



    

Now remove the sugar syrup from the gas and soaked all balushahi in the sugar syrup for about an hour.

Garnish with pistachios.

Enjoy yummy delicacy....









Tip:-

1) Don't  over work on dough...
2) Fry balushahi on low medium gas, it will cooked from inside
if you fry it on high gas, then balushahi will be uncooked from inside .

3) You can make any size of balushahi

Mohanthal Barfi/Besan Barfi



Mohanthal barfi/besan barfi is a very famous North-Indian sweet ..
It is made from gram four and lots of dry fruits...
It is very rich dessert and of course mouth-watering .
I am giving here very simple recipe







Ingredients

Besan/Gram flour  2 cup
Powdered sugar  1 cup
3 tbsp milk
ghee 3/4 cup
1/2 tsp cardamom powder
3-4 saffron leaves
finely chopped almonds, pistachios
1/4 cup water



Method
In a bowl , add besan , 2 tbsp ghee and 2 tbsp milk and mix well  using your finger tips till no lumps remain....

In a pan add ghee , once ghee melt and hot then add besan mixture and roast it until it become golden brown on medium gas 
Stir it continuously , make sure besan should not burn.
(It will take approx 10-12 minutes)

While roasting make sure there are no lumps left in the mixture.
Turn the gas on low 




  


Add some chopped almonds and pistcahios.
Add cardamom powder and saffron and mix well..

Now add powdered sugar and mix well. Add water and mix well. 

Mix fast and you will see the mixture thickening. 
Turn off the gas and mix whole besan mixture for 2 minutes continuously.



Now grease the plate with ghee...
Take out all besan mixture on the plate and press it lightly.
Garnish with chopped pistachios.





keep it aside for 20 minutes then cut the slices into square shape or desire shape.........


















Note :-

1) During roasting besan, gas should be on medium otherwise besan can be burn on high gas
2) If you are using granulated sugar , for barfi make sugar syrup in one thread consistency and mix it in roasted besan....

3) You can garnish with silver leaf
4)This recipe can be make only from powdered sugar...

Motichoor ladoo



   


Motichoor ladoos are very famous and delicious ladoos.....
yum yum...Mouth watering.....
:)

Motichoor laddo are made from small gram four deep fried balls which are simmered in sugar syrup ..
These ladoos are very delicious which can be eaten during any festivals...

So make these yummy ladoo with very simple recipe and share with your family and friends.







Ingredients:-

1 cup Besan (Gram flour)
1 cup water +  2 tbsp water
1 tbsp ghee
Pinch of Orange color

For sugar syrup

1 cup water
3/4 cup sugar
A pinch of cardamom powder
pinch of orange color
1 tsp lemon juice

some finely chopped pistachio for garnishing and for mixing in ladoo

Ghee for deep frying



Method

In a bowl , add besan , orange color and ghee and mix well...
Add water and make pouring consistency...

Keep it aside for 20 minutes...







Heat ghee in pan/kadai...

Ideally for making boondis , a special type of ladle use.
since I don't have this laddle so I am using normal ladle


When ghee is hot, then turn the gas on low medium gas and pour batter all over the ladle rather than at one place. Quickly start tapping the handle of the ladle

Once the bubble remove and you could see boondis, take out from the oil and keep it on the absorbing paper.. Repeat to finish and ladle should be clean every time before pouring the batter.

(Note:- don't over cook boondis, otherwise it will become more crispy)








Now make sugar syrup
Take a pan , add water and sugar , orange color and cardamom powder and cook it until it become one string consistency

Turn off the gas.
Add 1 tsp lemon juice..

Add the prepared boondis and some finely chopped pistachios and mix well and keep it for 30 minutes....

After 30 minutes lets start making ladoos....
Grease your hand with ghee and make laddoo of desire size
Garnish with pistachios
