Cone chaat in Airfryer || healthy || guilt free


Cone chaat is filled with various flavors as sweet, spicy, crunchy etc.. It is crispy from outside and soft from inside. 

Guilt free Chaat in Airfryer.
Superb yummy , mouth-watering and healthy. 








Ingredients:-

For Spinach dough
1/2 cup maida
1/8 tsp salt
1/8 tsp Carom seeds
1 tbsp oil
1 tbsp Spinach puree + 1 tsp

For white dough

1/2 cup maida
1/8 tsp salt
1/8 tsp Carom seeds
1 tbsp oil
2 tbsp water


Stuffing 
(As required/taste)

1 cup Boiled Chola (Chickpeas)  as required
(you can use Rajma, Matra, sprouts, peanuts any other stuffing)

1 boiled, peeled and chopped Potato
Roasted Jeera powder
Red chili powder
Black salt as per taste
Green chutney
Sweet chutney
Beaten fresh Curd / Yogurt

Chaat Masala

Garnishing

Sev or peanuts.


Oil for greasing

Method 

For  Spinach Dough
Mix maida, salt , Carom seeds and oil and mix well.
Add Spinach puree gradually and Knead the smooth dough.


For White Dough
Mix maida, salt , Carom seeds and oil and mix well.
Add water gradually and Knead the smooth dough.

Dough is ready.
Cover with damp clothe or towel paper.
Keep them rest for 10 minutes,

Preheat Airfryer at 180 C for 5mins.


Grease the cone Mold.
Roll the both dough into chapati.


Cut the strips vertically with the help of sharp knife.

Place one Spinach strip into cone mold.and press gently then
place some water on the edges.
and place one white dough strip.
Do continuously and make cones.
Our cones are ready.
Preheat container at 180 C for 5 minutes.

Then reduce temperature at 150 C
Place the cones in airfryer
and set for 10 minutes.


Then flip it after 10 minutes.
Keep it at 150 C for 10 minutes more.



Then Take it out and transfer to the plate.
try to take out the cone .
(Do gently otherwise it can be broken)


and then  keep it again for five minutes at 180 C .


Now crispy and cooked cones are ready.



Now let it cool completely.
Assemble all chaat stuffing ingredients and make yummy and mouth-watering chaat.

Take basket on a serving plate. Add boiled chickpeas, some curd, green chutney , sweet chutney .
Sprinkle chaat masala and black salt.
Add some sev .
Enjoy yummy,  mouthwatering and guilt free chaat.

Basket chaat in Airfryer


Basket chaat is filled with various flavors as sweet, spicy, crunchy etc.. It is crispy from outside and soft from inside. 

Guilt free Chaat in Airfryer.
Superb yummy , mouth-watering and healthy.







Ingredients:-

Dough

1 cup Sooji (Semolina)
1/4 cup Maida

1/2 tsp salt      (as per taste)
5 tbsp oil
water as required for kneading dough


Stuffing 
(As required/taste)

1 cup Boiled Chola (Chickpeas)  as required
(you can use Rajma, Matra, sprouts, peanuts any other stuffing)

1 boiled, peeled and chopped Potato
Roasted Jeera powder
Red chili powder
Black salt as per taste
Green chutney
Sweet chutney
Beaten fresh Curd / Yogurt

Chaat Masala

Garnishing

Sev or peanuts.

Method 

For Dough
Mix sooji, salt , flour, and oil and mix well.
Add water gradually and Knead the smooth dough.

Dough is ready.
Preheat Airfryer at 180 C for 5mins.


Grease the container/Mold. (I don't have any circle one, i have only this one..you can choose as per your choice).
Knead dough and divide into big balls.

Take one ball and roll it thin. Fork it by poking it with a fork/knife all over.
Mold the dough in the mold and press it using your finger. And cut extra part.


Put the container/mold in the Airfryer.

Keep it for 10 mins at 160 C



After 10 mins, You can see that dough started leaving the edges.
Then Carefully take it out from the container.(since its hot)
and put it again for 8 mins at 160 C



Turn and then keep it for 8 mins at 160 C .
and then  keep it again for five minutes at 175 or until it become golden in color.


Now crispy and cooked basket is ready.



Now let it cool completely.
Assemble all chaat stuffing ingredients and make yummy and mouth-watering chaat.

Take basket on a serving plate. Add boiled chickpeas, some curd, green chutney , sweet chutney .
Sprinkle chaat masala and black salt.
Add some sev .
Enjoy yummy,  mouthwatering and guilt free chaat.




You can use mini mould or small tart molds for making chaat

Cup chaat/Tokri chaat/Katori chaat

Cup Chaat/Tokri chaat/Katori chaat

Healthy oven baked chaat so we can enjoy chaat without any tension...












Ingredients

3/4 cup All purpose flour
1/4 cup Rice flour
2 tbsp oil
1 tsp salt

Chaat
boiled potato
boiled kidney beans/chick peas/ kabuli chana

(As Required)
Green chuteny
Sweet chutney
blend yogurt
Black salt
Roasted cumin powder
Sev


Method:-

In a bowl  Add All purpose flour, rice flour , salt and mix well.
Add oil and mix well . It will turn into bread crumb consistency.

Now add water gradually and make dough . (Dough should neither soft nor too hard)

Preheat oven at 350F

Cover the dough with the damp clothe for 5 minutes.

Take the muffin tray and grease with oil (as shown in picture)

Now divide the dough into small balls .
Roll the ball

and cover it ( as shown in picture)

put it into oven for 15 minutes.
(But oven time may be vary depend on the qualtiy of oven and quantity of katoris)











Your Katoris are ready...

Keep it for 10-15 minutes for cool down

Now you can assemble your katori and enjoy yummy  chaat

Gol Gappa puri

Golgappe/panipuri/sev puri are famous street chaat...
And we need Puri for all above things...
So here simple recipe of  puri 




For 25-26 Puris
Ingredients

1/2 cup Sooji 
1/4 cup maida/All purpose flour
1/2 tsp salt
A pinch of baking Soda
Water to knead the dough as per required

oil to fry


Method 
Take a bowl , Add Sooji , Maida, Baking Soda and salt . Mix properly.

Now Add water gradually and knead the stiff dough.



Grease your hand with 1 tbsp oil and knead the dough again for 1-2 minutes .
Cover it with damp cloth for 20 minutes.

Take the dough...divide into very small balls....
Roll it one by one 




Heat oil in pan on medium gas for frying the puris.
When oil is medium hot then take 5-6 puris and slide them gently in oil.
* Do not drop together...do it one by one....
Press Puri  little with spatula to puff them up.



Or you can roll 5-6  puris and then  fry....
Fry on medium gas until it become crispy and light golden in color
Your puris are ready...





You can enjoy puris as Pani puri or sev puri ............

Dahi bhalla or dahi vada

Dahi Vada or Dahi bhalla is a famous North India street chaat....
It is made from Urad dal .....




For 20-25 pieces 

Ingredients 

11/2 cup Urad Dal 
1/2 tsp of salt
2-3 tbsp of cashew pieces
8-10 pieces Raisins
A pinch of hing


For chaat
(Your choice)
Yogurt
Sweet chutney
Green chutney
Black salt
Roasted and grinded Cumin powder 
Red chili powder
Chaat masala
Sev 


Method

Wash and Soak Dal for 4-5 hrs into water and grind in a grinder with 1-2 tsp water.
Dal batter should be thick .
Beat the  Dal for 8-10 minutes with the help of hands...... Beating is the most important step.....It makes dal fluffy..and Vadas will be soft .

Add hing,salt , cashews and raisins and mix well.



Heat oil in a pan for deep frying 
Take small or big (according to your desire ) ball of dal and drop it into medium hot oil.
Fry it on medium gas until it become golden brown in color.




Now take out vadas from oil ....
and put it into water.......


Squeeze it properly and keep it into blended yogurt ...(yogurt should be in medium thick consistency)
and leave the vadas into yogurt for 5-8 minutes.


Now Add Sweet chutney , green chutney, roasted cumin powder and sev for garnishing....
Enjoy dahi bhalla chaat

Stuffed Sooji Tikki

Stuffed sooji tikki is crunchy from outside and soft from inside. Its taste will blown you away.
You can eat it in two different ways
  1) Eat with any chutney or sauce during tea time or breakfast or brunch.
   2) Eat it as a chaat with curd, chutney , namkin etc on it.

 








Ingredients:-

3/4 cup Sooji
11/2 cup + 2 tbsp  water
1/2 tsp Ajwain ( Carom Seed)
11/2 tsp salt
1/2 cup finely chopped cilantro
1 tbsp green chili and ginger paste
1/4 cup coarsely powder roasted peanut
1 tbsp oil

Stuffing:-
2 medium size boiled potato
1/2 tbsp salt
1 tbsp green chili and ginger paste
1/4 cup finely chopped cilantro
1/2 tsp red chili powder
1/2 tsp coriander powder
1 tsp Mango powder

( Optional for richer taste)
1/4 cup coarsely powder cashew
1/4 cup coconut powder

1 tbsp oil
Chaat Masala

Oil for deep frying


Method:-

Take a wok or kadai or pan. Boil the water . When water is hot, add Carom seed, Salt, Oil, Cilantro ,Chili and ginger paste. Boil for few seconds then add Sooji and Peanut powder.
Mix well. When you notice that Sooji has absorbed all the water, turn off the gas and stir for 2-3 minutes with the help of Spatula.

Take it out in a bowl and keep it aside.


 


Take boiled potato. Peel and Mash it in a bowl. Add all ingredients for stuffing except oil and mix well.
Take a pan . Heat 1 tbsp oil in a pan. and add potato Masala. Cook for 3-4 minutes.

Keep it aside.


Potato Masala
Now Take some oil on both palm and put Sooji dough between your palm and knead for 1 minute.

Now Dough and Potato masala both are ready.

Heat oil in a pan for deep frying .

Take a medium bowl from sooji dough, Spread it and make bowl shape Put one table spoon of boiled potato and close gently. Tikkis are ready


Now the oil is hot (medium hot) . Put your Tikkis into the oil. Fry it on medium heat from both side until it become brown in color and crisp.






Tikkis are ready.  Sprinkle some Chaat Masala on the tikkis and Enjoy it with either Green Chutney or Sweet Chutney as per your taste.



Tips :-

1)  While Kneading sooji dough, dough should be little warm otherwise sooji dough will be firm and we need only smooth dough of sooji for making tikkis.
2)  Stuffing should be at room temperature.
3) You can make chaat by adding curd , Sweet chutney , Cilantro chutney, chaat masala and Namkin etc.
4) You can also shallow fry the tikkis, but it will take little more time.

Potato basket chaat

Potato basket chaat is filled with various flavours as sweet, spicy, cruncy etc.. It is crispy from outside and soft from inside. Here I am presenting  healthy way of  Potato basket ........




For 4 basket

Ingredients:-

For basket

2 Medium size Potato
1 tsp salt
One table spoon oil

Stuffing 

1/4 cup Rajma (Kidney Beans)
1/4 cup Matra (White Peas)
1/4 cup Lobia ( eyebeans )
1/4 cup chola (kabuli chana)

Lemon juice

1 boiled and chopped Potato
Roasted Jeera
Red chili powder
Salt
Green chutney
Sweet chutney
Curd  (Yogurt)


Garnishing

Chaat masala
Any Namkin
( Pomegranate , coriander leaves)


Method:-

Soak Rajma, Matra , chola and Lobia overnight. Boiled all in cooker.
Keep it for cool down.
Add Potato and add  some salt , 1 tb red chili powder, 1 tb roasted jeera, 1 tb chaat Masala and lemon juice. Mix well.


Preheat oven on 360  Fahrenheit .
Peal the potato and shred the potato into shredder.
Wash well. Drain well.



Add salt and oil . mix well.

Grease muffin pan.
Spread the potato gently.

Keep it for 25 minutes in oven.



Tokris are ready.

Stuffing :-

Add 2-3 table spoon boiled Masala ( as per your taste )
Add 2 table spoon curd, 1 table spoon green chutney, 1 table spoon sweet chutney.
Sprinkle with chaat Masala and Namkin.

Note :-
1) For stuffing you can also use any sprouts , fruits.
2) You can also make it like pizza ...by filling cheese and veggies.
3) It is very important to note.
4)  For Garnishing, ingredients can be modify as per taste.
Baking time depend on your oven and quantity.
