Moong Dal Dosa

Moong Dal dosa is the combination of moong dal and rice . It is healthy, yummy and crispy pancake or Dosa.

Ingredients:-


1/2 cup green moong dal
1 cup rice
2-3 green chili
a small piece of ginger
1/2 tbsp salt
1 cup water

Oil for roasting


Method:-

Soak green moong dal and rice for 8 hours. Drain the water
Mix dal , rice, green chili , ginger in a blender. Blend in a blender. Adding water slowly as needed to make a smooth paste.
Mix the salt . Add water as needed for consistency of pan cake batter.





Place a non-stick skillet (tawa) or pan over medium -high heat.
Sprinkle some water and clean the skillet from the cloth.
Take a cup or 1/2 cup batter (acc to skillet size) into the skillet and spread evenly.
When the batter begins to dry, spread approx one table spoon of oil spread over it gently.


Wait for some time . Then flip the dosa with the help of spatula.
Press the dosa lightly with the spatula. and flip two -three times until dosa get crispy and brown in color.  Turn Dosa with the help of spectula




We also can make stuffed Dosa by stuffing Potato Masala and Paneer
Boiled the 2 large size Potato . Heat 2 tbsp oil in a pan Add 1/2 tsp mustard seed
Add curry leaves. Peeled the potato and cut into cubes. Add potato cubes in the pan.Add salt , turmeric, Cumin powder , Garam Masala, Dry mango Powder. Mix well.cook them for 5 minutes.
Potato Masal is ready. Take some paneer and crumbled.

On the skillet, on one side spread some potao Masala and paneer and fold with the help of spatula












Your Moong dal Dosa is ready

Tips:- 
While roasting Dosa gas should be on medium heat for crispy.
You can choose any stuffing onion, paneer, Tomato.

Sambar


Sambar is the combination of lentil and Vegetables with sour and spicy flavour. It is the famous south-Indian dish.

Ingredients 4

4 tbsp Arhar / Toor dal
1/4 cup Carrot cubes
1/4 cup peas
1 medium size Brinjal (egg plant)  cut into cubes
1/4 cup Squash (lauki) cubes
1/4 cup Potato cubes
1/4 cup green bell Pepper
1/4 tsp Turmeric (Haldi)
1 tbsp salt
(you can add more vegetables as per your choice as pumpkin, Zuchini, lotus stem )
 2  cup water
For Gravy

3 Medium size Tomato
2 green chili
small piece ginger
 1 onion (Optional)
2   tbsp Sambar Masala
1 1/2  tbsp Tamarind pulp
Pinch of asafetida
1 tbsp Mustard seed
1 tsp salt
2 tbsp oil
8-10 curry leaves

1 cup water  (or adjust acc to thickness)

Method

Wash and soak the dal for 10 minutes.
In a pressure cooker combine water, dal, vegetables, salt and turmeric. Cook over medium high gas for 15 minutes. Then turn the gas on medium low and cook for 10 minutes more.

Turn off the gas. Lets cool down cooker.
When all steam pass then check veggies are all tender and dal should be mash
Mix everything well.




Now take tomato , onion, green chili and ginger ...Add all in a blender and make purie

Heat oil in a pan. Add Mustard seed, when it cracks then add curry leaves. Stir for seconds.

Add Sambar Masala, salt. Stir for a minute.

 Add Tomato Puree.Stir for 15-20 minutes. Add boiled veggies into puree .Add Tamarind pulp Stir for 8-10 minutes more. (If you think that sambar is going to thick then add water or according to you how much thick u want )


Add Cilantro.  Sambar ready to be serve
Serve with dosa or rice or upma or uttpam......


Tips:- 
If you don't have Tamarind pulp ..you can add Dry Mango Powder tbsp
or 3 Tbsp lemon juice.
Water and sambar masala can adjust according to your taste. How much spicy u want

Coriander chutney or Cilantro chutney



Green chutney or Coriander chutney  is a side chutney which we make as a side dish or with chaats, dhokla , any Pakodas, pan cakes, Paneer Tikkas , sandwich.






Ingredients:-

Cilantro (Coriander )- big bunch
Cumin seed 1 tsp
A pinch of Asafoetida (hing)
Ginger 1"pc
2 Green chili
Mango powder 1 tbsp
Salt 1 tsp or as taste
1/4 tsp Garam Masala


Method

1) Add all the ingredients into a blender and blend to a smooth paste.
For making paste add little water (approx 1/4 cup)
2) Take all paste in a container . Keep it in the freeze.  It can be kept for 4-5 days






Tomato Soup

Another healthy soup no oil..no cream....

 


Ingredients

3  Tomato  (cut in to pieces)
1 1/2 tbsp salt    or salt to taste
1/2 tsp Black pepper
1 tsp Black salt
1 tsp sugar (Optional)
4 cup water or vegetable broth
1 green chili  (chopped)
1 tsp ginger
1/4 cup cilantro
1/2 tsp lemon juice


Method :-

Heat a non-stick pan . Add ginger , green chili , Tomato, salt  and 1 cup water or vegetable broth.
















cover the pan with the lid.cook for 12-15 minute


After 15 minutes ... cool down for some time then blend in a blender.Now tomato puree is ready





Heat a pan. Add Puree , black pepper, black salt ,water or vegetable stock, sugar.
Cook for 12-15 minutes.

 



Turn off the gas . Add lemon juice.
Garnish with Cilantro








Soup is hot and ready  to serve  with bread crumbs or croutons.

Tips:-

1) Salt and pepper can adjust to your taste how much spicy do you want
2) Same as water if how much thickness do you want in soup so adjust water .
And also can add cornstarch as Mix 1 tbsp corn starch with 2 tbsp water and add in soup and boil for more 2-3 minutes more.  
3) You can garnish with cilantro or basil leaves.
4) Onion and garlic are optional . 
5) For richer you can add cream.

Curd Potato (Dahi ke aloo )

Dahi ke aloo for fasting.....







Ingredients:-

One boiled Potato
1/2 tbsp green chili and ginger paste
1 tbsp sendha salt (for fasting)
1/4 tsp black pepper
1/4 cup finely chopped cilantro
1 1/2 cup water
1/2 cup Curd (yohurt or dahi)
1 tbsp lemon juice



Method:-

Take a bowl  mashed potato. Add curd , green chili paste, and black pepper . Mix well .Keep aside for 10-15 minutes.








Heat a kadai or pan
Take the mixture of potato and add into pan. Add water and cook for 10 minutes on medium gas.

Add salt , Lemon juice ...Boil for one minutes more.  Add cilantro.
Dahi ke aloo is ready


Adjust salt, pepper , lemon juice and water according to your taste and thickness of curry....
So enjoy fasting.....



For normal :- use cumin seed, red chili and Dry Mango powder .

Aloo tikki (Potato Pattie ) for Fasting (vrat)


One more fasting appetizer...Aloo ki tikki..
Who says fast is boring :)

 





Ingredients :-

2 Large size Boiled potato
2 tbsp green chili and ginger paste
1/2 cup finely chopped cilantro leaves
1/4 cup crumbled roasted peanuts
1/2 tbsp sendha salt (for fasting) or normal salt
1/2  tsp black pepper
Oil or ghee for shallow fry

Method:-


Take a bowl. Peel and mashed the potato.



Add green chili paste, salt , pepper , peanuts and cilantro leaves . Mix well with the fingers.






Divide the dough into equal parts and give them round shape to make pattie or tikki


Heat the pan or skillet (Tawa).Place the  tikkis on the skillet on medium heat. Put some oil on the tikkis. Cook it for some time (2 minutes approx ) then turn them ..put some oil on it . And cook them. Turn again and again until tikkis become golden brown and crispy.
Tikkis should be cook on medium gas.
(it will take 12-15 minutes approximately)




Tikks are ready .
( Make sure Tikkis should be crispy)
Aloo tikki can be eat during normal days with the curd, green chutney, sweet chutney.
Sprinkle some papdi ...your Aloo tikk is ready
