Hummus Mediterranean || No Onion/No Garlic || Jain || Falafel










Ingredients :-

1/2 cup Chickpeas / Chola
1/4 cup Sesame seeds
3/4 cup olive oil
5-6 Cilantro leaves
21/2 tbsp lemon juice(as per taste)

1/4 tsp kashmiri red chili powder / paprika

1/2 tsp salt or as per taste


Method :-


Soaked Chola overnight
 and boiled in a pressure cooker  in a right way.
Chola should not be get mushy.

Drain completely.

in a grinder , add boiled chola/chickpeas, lemon juice, sesame seeds, cilantro, salt and kashmiri red chili powder.

And make smooth and thick paste.
(Don't add water , if required add olive oil).

This chutney is thick as compared to other chutneys.
dip/chutney is ready.


(in simple words, we can say this chola ki chutney ).
Garnish with some extra virgin olive oil, add some paprika/kashmiri  red chili powder, and some boiled chola.


Serve with falafel.

Kadai Paneer || No Onion /No Garlic || कढ़ाई पनीर || ना प्याज / ना लहसुन ||





                          

Kadai Paneer in Restaurant Style  No Onion/No garlic
So you can enjoy during fasting and festivals.
Jain Kadai paneer and very easy to make.

Super yummy .




Ingredients

Whole spices

1/2 tsp Coriander seeds
1/2 tsp Cumin seeds
2-3 whole black pepper
1-2 cloves
2-3 Whole red chili


For gravy
6-8 Almonds
5-6 Cashews
1 tbsp Poppy seeds
1-2 green chili,
A small piece of ginger
1 large size tomato or 2 medium size tomatoes.
1/2 tsp kashmiri red chili powder

1/2 cup square cut red bell pepper /green bell pepper /yellow bell pepper
1/2 cup Paneer or as required.

2 tbsp oil
1/2 cup water or as required
2-3 tbsp cream

salt as per taste



Method :-


In a pan, add all whole spices  and saute for 1-2 minutes on medium gas or  until aroma starts coming.at

Now turn off the gas and let it cool down and grind in a grinder and make powder.



Now in a pan, add 1 tbsp oil , add cashews and almonds saute for few seconds.
Add poppy seeds and saute
Now add green chili , ginger and roughly chopped tomatoes and mix well.
Add 1/4 cup water and cover with lid and cook it for 4-5 minutes on medium gas or until it become mushy or soft.


Turn off the gas.
Let it cool down and make puree in the blender.


Now in the pan, add chopped bell peppers, add pinch of salt and kashmiri red chili powder and mix well.

Saute for few seconds on high gas, it should not be soft.
Add some paneer and saute for few seconds more.
Mix well.

now transfer them into a plate.

Now in the same pan, add 1 tsp oil
Add puree and stir it for 2-3 minutes. Add 1/4 cup water and cook it for few seconds.
Add roasted and grounded spice and mix well.
Add kashmiri red chili powder And mix well.

Add 1/2 cup water and cook it for 4-5 minutes on medium gas.

Now the gravy is ready add bell peppers and paneer and mix well.
Add 2 tbsp cream or as required.
Mix well.
Cover with lid and cook it for few seconds.

Turn off the gas.
Take it out on the serving bowl.

Garnish with some grated paneer and cilantro .
Serve with chapati, parantha, poori , naan, etc.

Enjoy .

Papad Bowl chaat || Airfryer chaat|| healthy





Take two bowls of same size.

Grease one bowl from inside and another one from outside with oil gently.

In big plate/tray/parat take some water.

Dip papad into water for 10-15 seconds. (Depending how original papad is hard).


Then transfer papad into Towel paper or clothe.

Dry the papad lightly.

Then place the papad inside the one bowl , gently.
Press lightly.

Then place another bowl above papad and press.
Remove excess part (We will use later to make one papad bowl chaat)

Keep the bowl pair in the airfryer at 175 C for 5 minutes.


Then take it out. Lets cool down .

Then try to take the bowl and then take out the papad bowl.

Your papad basket is ready...


Now grease the bowl again
and place that excess part of papad one by one gently inside the bowl then place another bowl.

Then keep the bowl pair in the airfryer at 175 C for 5 minutes.

Then take it out.

Remove papad basket from bowls.


Your Papad bowls are ready.

you can serve as a chaat, add boiled poatato, chola or you can add bhel ,
Peanuts, tomatoes, onions etc.

Enjoy healthy and crunchy chaat .

Cucumber and Yogurt/curd Popsicle || खीरा / ककड़ी और दही आइसक्रीम



Healthy, colorful and flavorful Cucumber yogurt Popsicle
No Milk, No Cream, No Biscuits/cookies, No Condensed milk, No Cooking , No fire,
A very simple, healthy recipe with two ingredients.



Ingredients

2 Cucumber peeled,  washed and grated.
11/2 cup yogurt ,
1/4 tsp Roasted cumin/ jeera  powder
1/4 tsp Black salt
Sugar  2 tbsp or as per taste

Rooh Afza and khus syrup


Method


In a bowl, add yogurt , cumin powder, black salt , kashmiri red chili powder , sugar and grated cucumber.
Mix well.

Pour into mold or glasses, and sprinkle some Rooh Afza and Khus syrup in to the glasses , keep it in the fridger for 5-6 hrs.
Then After 6 hrs.
Dip icecream mold and glasses, dip in the warm water glass/bowl for 10-15 seconds.

Then Take it out and enjoy cold popsicles.

Kids friendly, healthy and yummy popsicles, perfect for summers.

तिरंगा ढोकला||Tricolor Dhokla||स्वतंत्रता दिवस विशेष||No food Color||कोई...



                           


A great combination of Oats, Sooji and Dhokla.

No food Color



Ingredients

For green Layer

3/4 cup Oats flour
2 tbsp Sooji
1/2 tsp salt
1 tsp sugar
1/2 cup spinach puree
2 tbsp Curd/yogurt
1/4 cup Lukewarm water

For white layer

3/4 cup + 2 tbsp  Sooji/Semolina
1/2 tsp salt
1/2 tbsp sugar
1/2 cup yogurt
1/4 cup  luke warm water

For Yellow Layer
3/4 cup Besan + 1 tbsp Sooji
1 tbsp sugar
1 tsp salt
1/4 tsp red chili powder
a pinch of turmeric
1/2 tsp citric acid/lemon juice
1/4 cup luke warm water


Oil for greasing container
water for steamer
Eno 11/2 tsp

For Tempering
2-3 tbsp oil
11/2 tsp Mustard seeds
5-6 green chili

For Garnishing Grated coconut or desiccated coconut



Method :-

In three separate bowls,
make green , white and yellow batter

in one bowl, add all green layer ingredients and mix well and make smooth batter.
(The batter should neither very thick nor thin)


In Another bowl, add all white layer ingredients and mix well and make smooth batter.
(The batter should neither very thick nor thin)

In another bowl, add Yellow layer ingredients and mix well and make smooth batter.
(The batter should neither very thick nor thin)


Keep aside all batters for 30 minutes.

After 30 minutes.
Prepare Steamer.

Greased the container with oil.

When the water boiled completely.
Add 1/2 tsp Eno in green batter and mix well.
Pour in the greased container and cover with lid and cook it on high gas for 3-4 minutes

Add 1/2 tsp Eno in the white layer batter and mix well.
After 4 minutes pour white batter over green batter.
Cover with lid.and cook it on high gas for 3-4 minutes

After 4 minutes.
Add 1/2 tsp eno in the yellow batter and mix well.
and  pour yellow batter over white batter.
Cover with lid.and cook it on high gas for 20-25 minutes .

Check after 20 minutes .
Insert the tooth pick or knife, if its come clear then its ready otherwise cook it for 3-5 minutes more.


After 25 minutes
Dhokla is ready.
Keep it side for cool down.

After 10-15 minutes.
Scrap the dhokla from sides with the help of knive.

With the help of plate flip dhokla.
Now green side come then again turn dhokla now yellow side come.

Now prepare tempering.
Take small pan
Add oil , when oil is hot then add mustard seeds ,
when it start crackling then add green chili .
Saute for few seconds.
Now tempering is ready.


Pour over dhokla
cut dhokla in to desire shape.

Garnish with coconut powder.

Serve with chutneys.


Tip:-
If your dhokla is not very soft then add some around 1  cup water in the tempering pan and boiled
and then pour that tempering over dhokla.
Your dhokla will be soft and spongy.

Airfryer Healthy Cake

Ingredients

1 1/4 cup multigrain flour (Wheat flour)
1/2 cup yogurt
1/3 cup sugar + 2 tbsp sugar (Adjust as per your taste)

1/2 cup olive oil
1/2 tsp baking soda
3/4 tsp baking powder
1/8 tsp salt
1/4 tsp vanilla essence (optional)


Tooti frooti

Some chopped dry fruits


Method

In a bowl add , yogurt /curd, oil and sugar and whisk for 2 minutes until it get creamy.
Take seiver , add multigrain flour, baking soda, baking powder and slat and sieve .
Cut and fold method use and make cake batter . add tooti frooti and vanilla essence.

Mix well.

Pour the cake mixture into greased aluminum container.
Preheat airfryer at 180 C for 5 minutes.
Then keep the container in Airfryer .
Set the temperature at 140 C for 25 minutes.
Check once after 20 minutes.

then cake is ready.
Insert the toothpick and check if its come clear.

cake is ready.
Transfer it into plate . healthy and yummy and spongy cake is ready.

Airfryer Healthy Fries


No Potato, No CornStarch, No Sooji, No Maida

Ingredients

5-6 Boiled Taro root  (Colocasia)
salt and black pepper as per taste.


Method :-

Boiled and peeled Taro root .
Cut into thin slices.

Keep them in airfryer at 150 C for 10 minutes
and then flip them and keep it for 10 minutes at same temperature.


For golden brown color keep them at 175 C for 2-3 minutes.
(You can brush with oil as well )

Saffron Rabdi with only two ingredients || No Bread No CornStarch No Con...


Rabdi is the very famous dessert in India which is made from pure  milk.

Please try this super yummy and simple recipe with only two  main ingredients.
 
#No Condensed milk  #No Corn Starch  # No bread.





 
Ingredients:-
  5cup whole milk
1/4 Cup Sugar  (or as per taste)
A pinch of cardamom
About 8 - 10  Soaked Almonds
8-10  Soaked Pistachios
4-5 Saffron leaves soaked in 2 tbsp milk





Method:-
1) Boil the milk on on a low to medium flame,  and keep stirring and scraping the sides of the pan.Stir often to ensure the milk does not burn in the bottom of the pan. (It will take around 30-35 minutes).
If you are cooking on high gas then stirring continuously.


When the milk come reduce to less than half and it will be very thick.





2) Now add Sugar and  mix well. Add cardamom powder cook it for for seconds more and turn off the gas.
Let it be cool completely.
Transfer it into a serving bowl.
Now peeled and chopped soaked Almonds and pistachios.

Garnish with Almonds and pistachios and some saffron.
Keep it in the refrigerator for an hour and then serve cold .

You can enjoy this rabdi with malpua , Ghevar or jalebi as well.

Ghevar || how to make crispy & porous ghewar with honeycomb at home


ghevar recipe | how to make crispy & porous ghewar with honeycomb at home with detailed and video recipe.
Ghevar/घेवर is a popular sweet in Haryana, Delhi, Gujarat,Rajasthan, western Uttar Pradesh, Madhya Pradesh etc.
Basically, It is disc-shaped sweet cake made with maida (refined wheat flour) and soaked in sugar syrup with porous texture. and served with Rabdi . There are many varieties of Ghevar, including plain, mawa and malai ghevar. It is generally prepared in July–August for the Teej or Rakshabandhan festival.

It is easy to make with some tips and tricks, which i am going to share here that may be you don't know before .
try this recipe and share with your friends and family.







For 2 ghevar
Ingredients
1 cup Maida
1 tbsp besan /Corn starch
1/4 cup ghee
4-5 ice cubes
1 tsp lemon juice
1/2 liter chilled water
For Sugar Syrup
1 cup sugar
1/2 cup water
1/8 tsp cardamom powder
3-4 saffron leaves

2 cup or as needed Rabdi
Some chopped pistachios
Some chopped almonds
some saffron leaves

Method

In a big plate, take 1/4 cup ghee and 4-5 ice cubes.
Mix and start rubbing the ghee in a circular motion until till the ghee thickens and turn creamy.

keep rubbing for 8 minutes or until it coming smooth and you can make solid ball of ghee.

Then add 1 cup of maida and 1 tbsp besan
(you can use also cornstarch instead of besan )
mix and crumble well.
Add water gradually  and make pouring batter
(we need 1/2 liter water )
now seive the mixture in the seiver and make lump free pouring batter.
Add 1 tsp lemon juice and mix well,.
prepare a smooth flowing consistency ghevar batter. the batter is ready to make ghevar, keep chilled till you are ready to fry.
Batter is ready now.

Now pour the batter into bottles.

heat ¾ level of ghee or oil in a saucepan

make sure the oil is very hot, then pour the 2 tbsp of batter keeping a good distance from oil (approx 10 cm).

the batter will splatter and later the froth subsides.

Drop the batter from the bottle in the center in a thin stream keeping distance from oil.



repeat 10-15 times depending on the size of the saucepan.

make sure to leave a hole in the center with teh help of spoon or fork.


fry on medium flame till the ghevar turns golden brown.

scrape the sides with a knife and push ghevar into the oil.
continue to fry till the bubbles disappear completely.
pull the ghevar out gently, and drain off the oil completely. keep aside.

sugar syrup preparation:

now prepare the sugar syrup by taking 1 cup sugar and 1/2 cup water.

dissolve the sugar completely and boil for 5 minutes.

continue to boil till 1 string consistency is attained.
Add 5-6 saffron leaves and  1/4 tsp cardamom powder.

pour the 4-5 tbsp sugar syrup over ghevar
also, garnish with chopped nuts and some saffron leaves.
finally, garnish the ghevar with  rabri and  garnsih with some chopped nuts 
ready to serve.
 
Here some important notes.
1) firstly, keep the batter really chilled to get honeycomb texture.
2) also, adjust the consistency of batter by adding ice cold water.
3) ghevar can be stored for a month in an airtight container and dip in sugar syrup and serve with rabdi  
4) Rub ghee with ice cubes well .

Shaam Savera in Airfryer || Tricolor

" Shaam Savera " is a signature recipe of Chef Sanjeev Kapoor.

Its very interesting recipe as it sounds. In this recipe Paneer hides in the shades of Spinach and sink in the Tomato and Cashew Gravy.


This dish also a sign of Tricolor , since it has three colors.

Paneer, palak (Spinach) and Tomato are main three ingredients of this recipe.

Ingredients 


For Koftas
Outer layer

Spinach 300 gm/ 10 oz
1/4 tsp salt
1/4 tsp red chili powder
1/4 tsp salt

iced water/cold water (It will help to preserve green color of Spinach)

Inner Layer 

1 cup grated Paneer
A pinch of salt
Some raisins for stuffing (optional)

Oil for frying Koftas

For Curry

2-3 Medium size Tomatoes
6-8 cashews
1 -2 green chili
A small piece of ginger
salt to taste
1/4 cup of cream or as needed
1/2 tsp Kashmiri red chili powder

1 tsp Roasted garam masala powder
1 small cinnamon Stick
1 bay leaf
2-3 long (cloves)
1/4 tsp cumin seed
1/8 tsp Coriander seeds


2 tbsp oil
1 1/2 tsp sugar/honey or as needed

1-2 cups of water or as needed






Method 



Spinach Koftas (Stuffed from paneer)

For Outer Layer

Blanching Process 

Wash Spinach in water to get rid of dirt.
Boiled the water, Add spinach for 2 minutes. Turn off the gas.
Then Keep the Spinach in cold water (Ice water)
Cold water help to retain green color of Spinach
Now Squeeze Spinach as much as you can do. This step is very important, If spinach have water then it will be very difficult to make koftas.

You can use muslin cloth, or just press between ur palm. After Squeezing ,
Blend Spinach in blender(without water) or just do finely chopped.
Heat a Pan, add Spinach and stir it on high gas for 2 minutes or until it become dry.

Add red chili powder and salt and mix well. Turn off the gas.


Keep it aside for cool down.



For Inner layer


In a bowl, add grated paneer, and pinch of salt. Knead paneer for 2-3 minutes or until it become smooth.
Divide the paneer  into small ball or which can be fit into Spinach balls.
Grease your palm with oil .Now take one paneer ball, flatten it and put one-2 raisins and wrap from all the side . and make round ball.
Lets Ready all paneer balls.
Now Divide the Spinach mixture into small parts.
Grease your palm (it will help you to make smooth ball)

Now take one spinach ball , flatten it and put one paneer ball and wrap from all the side and make round ball. (Wrap carefully, stuffing should not come outside).
Repeat the process with other balls.
Now Koftas are ready.
                                     

Airfryer Time

Preheat Airfryer at 180 C for 2 minutes.
Add Koftas and reduce time to 160 c for 5 minutes.
Flip the koftas
Then Keep it again for 5 mins at 160 C.
After 5 minutes, set temperature at 180 C for 3-5 minutes.


Koftas are ready.
Let it cool down and then Cut into two parts.






Gravy time :- 


Heat one tablespoon oil in a pan.
Add Cinnamon Stick, cloves, coriander seeds, cumin seeds, bay leaf stir it for few seconds.

Add chopped Tomatoes, cashews and 1 chopped green chili and 1/2 tsp ginger paste.
and cooked til they turn tender Add 1/2 cup water . it will take around 6-8 minutes. Keep stirring in between .
Turn off the gas and let the mixture cool down.


Add this mixture into a blender and make a smooth  puree, you can add some water as needed to make smooth puree.

Heat oil in pan. Add puree and 1/2 cup of water and mix well.. cook it for 6-8 minutes on medium gas.
Then Add salt , Sugar and mix well. Cook it for 3-4 minutes 

Add 1/4 cup cream and mix well. cook it for 1-2 minutes and turn off the gas cover it with the lid.



now we have koftas and curry.


Do not boil  koftas in the gravy as they are liable to break .


First take some curry into serving dish and then add koftas.
garnish with cream.



Serve hot with naan or chapati or parantha.




Here are some more important Tips which may be need to make this yummy recipe.

1) Spinach should be squeezed properly. if Spinach has water then koftas won't make good. and you have to add binding agent that will be koftas make hard. (I have experienced of this fault )

2) Don't cook koftas in curry, since koftas are very soft so they can be break while cooking.

3) Adjust spices a s per taste.
