Vrat ki Stuffed Kachoris in Airfryer/Deep fry

Vrat (Fasting) ki recipe.
Fast should not be boring right ?

 Here is the healthy , yummy and easy to make stuffed kachodi recipe for fasting

#Airfryer recipe
#Shivratri
#Navratre
Even you can enjoy these yummy kachoris without fasting as well.








Ingredients:-

1/2 cup Kuttu flour (Buckwheat flour)
1/2 cup coconut flour
2 medium size boiled potato
Salt to taste
4-5 tbsp oil
water to knead the dough 

For stuffing
1/4 cup grated paneer or as needed
8-10 cashews pieces
8-10 Raisins
a pinch of cardamom powder








Method :-


In  a bowl, add kuttu flour, coconut flour , salt and mix well. Add mashed potatoes and oil and mix them .  Now add water to make dough. (Dough neither should be hard nor soft) .


Dough is ready ..grease dough with the oil/ghee.

Now in another bowl, mix all stuffing .





Air fryer :-

Preheat airfryer 180 C for 5 minutes


Now prepare kachodis
Divide the dough into equal parts and make balls...


Roll it and put one paneer filling and sealed it properly  and make the ball shape (as seen in pics) 



Repeat it with all the dough balls and make kachodis..





Now kachodis are ready to go in airfryer...


Set the temperature 160 F for 10 minutes
Turn the kachodis

Then set the temperature 160 for 10 minutes 
Grease kachodis lightly with oil (optional)
then set temperature 175 F for 5 minutes (for more brown color)

Kachodis are ready..
if you want more golden brown color you can keep kachodis for more time.

Healthy kachodis are ready.


Similarly you can also deep fry kachodis in oil .
When the oil is warm then put the kachodis and fry it on medium gas.



Serve with green chutney ..


 Enjoy yummy and healthy kachodis

Cutlets from left over khichdi in airfryer

Are you among those who don't like to waste food? and also you and your family don't want to eat again same thing.....then



 



What can be a option...
Since Khichdi is very healthy but we can't eat same thing again and again at a same day...
So lets make something delicious from the leftovers...
Veggies Khichdi cutlets....

They are yummy in taste and definitely healthy because we are using khichdi and veggies...

So great idea of using left overs and make some healthy snacks
 Here I have unique and appetizing recipe from leftovers..
If you made Khichdi for your lunch , so try this yummy snacks for your family at tea  time....
Trust me ....your family won't be able to identify that these cutlets made from left over khichdi ....:)

I have  some left over Khichdi (Moong dal & Rice)  .
and some Dry Cauliflower potato peas  sabji 

Here is the recipe in Air fryer .

 So enjoy healthy and yummy recipe.

Ingredients

About 11/2 cup Left over Khichdi
Salt to taste
1 tbsp Maggi masala/kitchen king masala/chaat masala or as per taste
2 tbsp or as needed Sesame seeds
1 tsp green chili paste
Handful finely chopped cilantro
1/2 cup Bread crumbs or as needed
Dry Cauliflower Sabji (If you don't have dry sabji you can add more boiled peas, potatoes, carrots, frencs beans)


Oil for greasing.

(You can adjust taste as per your taste )


Method


In a bowl , add Khichdi and vegetable mix.

Mash khichdi and vegetable gently by masher or use your hand

(If your khichdi and vegetables are watery , so cook it until all water get absorbs otherwise you have to add corn starch or besan for binding them).



Take out all mixture in a bowl.
Add  maggi masala, bread crumbs, chili paste, chopped cilantro and salt.

(You can add kitchen king masala  too.)


Mix well.


Grease hand with oil and make patties as per your desire shape.

Heat the pan. Add 2 tbsp oil..

Coat cutlets from sesame seeds/bread crumbs.
Or you can make simple roll.

Preheat airfryer 180 C for 5 minutes.








Then Cooked for 10 minutes at 165 C
and then just flip and do it again for more 10 minutes more at 165 C

then for color cook it at 175 C for 6-8 minutes.




 


These cutlets are very crispy and cooked properly.
Serve with green chutney or Sweet chutney or ketchup.

Note :-

**If you don't have any left over cooked dry vegetable, so you can add boiled potato , peas , carrots or any vegetable of your choice

**Since I had some left over dry mix vegetable (combination of brinjal, Squash, bottle gourd, peas, potato and tomato).

**if you have vegetable khichdi or any type of khichdi then you can make cutlates ...

**If you have any cooked watery vegetable you can also use it , ..just cook it on high gas until all water absorbs.

Paneer Puff in Airfryer

Very simple and healthy recipe from Paneer bhurji
Air fryer recipe
I am using here  Left over paneer bhurji...you can make it by using fresh paneer.



No deep fry.
I am making these puffs from multigrain bread, you can use any bread as per your choice like white bread /brown bread..
or you can use roll sheet.

Ingredients :-


Multigrain Bread
Paneer burji 
Some water in a bowl
Air fryer :)



Method :-


Roll the bread with the help of roller.
Put one -two spoon of paneer bhurji.
Brush plain water around the  edges and seal it gently.
Close the bread from one side.






 






Preheat Airfryer on 175 C for 4 minutes

Keep puff for 5 minutes on 175 C


Then flip and keep it for five minutes on  175 C
If you want you can grease it with butter/ghee.





  Your hot healthy and yummy Paneer puff are ready. Enjoy.

Spinach Kadai Paneer

 Kadai paneer with little twist ..
 If you get bored with traditional kadai paneer , try this ..I am sure you will like it.
Healthy , yummy and easy to make.



Ingredients 


 1 1/2 cup  blanched and puree spinach
1/2 cup red bell pepper cut  into length wise
1/2 cup green bell pepper cut  into length wise
1/2 cup onion  cut  into length wise
1 tomato deseeded cut into lengthwise

 Around 1 cup paneer cut into length wise

11/2  tsp kadai masala
Salt to taste

1 tsp oil
1/2 lemon juice
salt to taste

2-3 tbsp cream



Method





 In a sauce pan, add oil  , when oil is hot then add Onion and bell peppers  and stir fry for 3-4 minutes or until it become tender.
Add Tomato and stir and make tender. 

Add  salt and kadai masala and mix it . 


 
add some water and cook it for 2 minutes.

Add spinach puree and mix well and cook it for more 2-3 minutes. 
Add cream and mix well. cook it for more 1-2 minutes.
Turn off the gas. Add lemon juice and mix it.

Garnish with some onion and cream and serve hot with chapati.

Eggless Basbousa (Semolina and coconut cake)

Basbousa  is a traditional Middle Eastern sweet cake. It is made from semolina (sooji / Rava)  soaked in simple simple sugar syrup.


Here I am  making  Semolina and coconut cake  .
 Its very simple to make .
Semolina , coconut and yogurt (Curd) are important ingredients to make this cake.
No  Egg, No flour and no condensed milk.
You can add mango, chocolate for more  flavors.
You can add almond, pistachios or cashews according to your choice.


Its very yummy in taste and healthy too .
You can make this sweet on any festive as well, since its eggless and very easy to make.





Ingredients :-


2 cup Semolina(Sooji )
1 cup coconut powder/ dessicated coconut
1/2 cup olive oil/butter/ (half butter and half oil ) 
1/3 cup Sugar

1 tsp baking powder

1 cup yogurt (curd)
2-3 tbsp pistachio coarsely powder
Yellow color /Saffron (optional)

Sugar syrup
 2 cup Sugar
11/2  cup water
A pinch of cardamom powder
1 tbsp lemon juice

 
Garnishing 
Some pistachios/Almonds






Method 


Preheat oven to 375 degree F
Grease container with the oil/butter.
Mix the semolina, coconut, sugar and the oil in a large bowl. Use your hands to incorporate the oil/butter with the other ingredients until mixed well.
In another bowl add baking powder and curd and whisk it . Add the yogurt mixture into semolina mixture  and continue mixing with your hands until fully combined.Add Yellow color and mix well. The mixture should be fairly thick and easy to press with hands (not thin like cake batter).





Pour the batter into container and sprinkle some pistachio powder over it.
Bake at 375 F  for 40-45 minutes.





After baking take out cake from the oven.


Prepare sugar syrup .
Mix water and sugar in the  sauce pan and place the pan  on the high gas.
When sugar dissolve and started getting thick then add cardamom powder and lemon juice. 
Turn off the gas.

Cut the cake into desire shape and Pour sugar syrup over the cake .

Your basbousa is ready.





Serve and enjoy and share it with your friends and family.
