Falafel


Falafel is a deep-fried ball, or a flat made from ground chickpeas. Herbs, spices, and onion relatives are commonly added to the dough. It is a well-known Middle Eastern dish that most likely originated in Egypt.
These are very crispy from outer and soft from inside , which are now found around the world as part of vegetarian cuisine .
Falafel balls can be eaten as falafal sandwich, falafal wrap.

Its very easy to make and delicious.
 You can eat with this garlic chutney , hummus or green chutney.







Ingredients 


2 cup Chola (Kabuli chana . chickpeas)
Around 1 cup of parsley roughly chopped (You can use cilantro also)
1 garlic roughly chopped
1 medium size onion roughly chopped
salt to taste
1/2 tsp red chili powder (you can use green chili as well )
1/4 tsp baking powder
1/2 cup of green cilantro (coriander /dhaniya leaves )

oil for deep frying


Method 

Soaked Chola/chickpeas in the water for over night. and drained completely.
In a grinder, add chickpeas,  parsley, cilantro , garlic, onion, salt, red chili powder, baking powder and grind it .

Now the mixture is ready , take out mixture  into the bowl/plate.

Heat oil in a wok/kadai for deep frying.

When the oil is medium hot add little ball of mixture into oil and see the ball is spreading or not. if the ball is not spreading , your mixture is ready to make balls ,(I am not using any binding agent)
but if its spreading then you can add chick peas flour (besan)/ bread crumbs.

 Now prepare all the balls and fry on medium low gas. It will take time.
if you fry on high gas then it will cook from outer and uncooked from inside.


Serve hot .

Note:-

If you don't have parsley, no need to worry use cilantro (fresh Coriander leaves /green dhaniya )

You can skip garlic , if you don't eat

Wheat flour mini cookies
















Wheat flour mini cookies
No maida
Here is super easy, super crunchy and healthy recipe of cookies/biscuits in airfryer.



                                                                    
  



Ingredients

1 cup wheat flour

1/4 cup room temperature butter / ghee
1/4 + 1 tbsp cup sugar (if you want more sugar you can add 2 tbsp more )
1/2 tsp baking powder
1/4 cup milk
1/8 tsp salt

Method:-

In a bowl, add butter/ghee and sugar and mix well.
Whisk it for 2-3 minutes or until it become creamy.

Now add wheat flour, baking powder , salt and mix well.
Add milk gradually and make smooth dough.



Allow dough for resting for 20 minutes.

Cookies with butter






Cookies with ghee


Knead dough for 3-4 minutes and divided into 12-14 balls and make round shape.
Garnish with pistachios.

you can roll the dough and make shapes by using cookie cutter .










Preheat Airfryer at 180 C for five minutes.
Then reduce temperature at 150 C  and keep the cookies for  8 minutes.
Then turn the cookies and keep it again for 8 minutes at 150 C.






Now turn off the Airfryer .
Keep cookies in Airfryer for 3-4 minutes.




Take out and Cookies are ready.

Let the cookies cool down .

Enjoy with tea

Khasta Kachodi/poori from the left over Moong dal (cooked Moong lentil)

We should not waste anything..
This is recipe from left over cooked Moon Dal.










Ingredients

11/2 cup left over Moong dal
11/2 cup wheat flour
1/4 cup Sooji/Semolina
1/4 cup Gramflour/ besan

(Note :- you can add Bajra flour, jowar flour, maida flour , Since I am using here multigrain wheat flour)

4-5 tbsp oil

water as required

1/4 tsp Carom seeds (Ajwain)
1 tsp salt
1/2 tsp green chili paste (you can use red chili powder )

(Note :-   You can adjust spices as per your taste, since dal have already spices.)


For Stuffing 

2 boiled, peeled and mashed potatoes.
A pinch of hing
1 tsp salt
1/2 tsp red chili powder
1/2 tsp  Mango powder



Method :-

In a bowl,

Add dal, all flours , salt, carom seeds, green chili paste and mix well.
Add oil and mix well until all oil mix well into flour and flour started to bind.
  If you think you need some water, add gradually and knead semi hard dough.
Keep it for 10-15 minutes for resting.






In another bowl, add all stuffing ingredients and mix well.


Here Stuffing part is optional, you can make Stuffed kachodis or you can make just Khasta pooris.

Both will be delicious.

Heat oil in a pan for deep frying

  1. Divide the dough into equal portions. Depend on the size of Kachodis/pooris .
  2. Similar way divide the potato stuffing into equal portion and make the ball.
  3. Roll out each portion of the dough into a circle.
  4. Place one portion of the Potato filling in the center.
  5. Bring together all the sides, seal it tightly and remove any excess dough.
  6. Either Roll the filled portion again into a diameter circle, while ensuring that the filling does not spill out. or Take the sealed ball between the palm and press it. 
  7.  Repeat it and make all the kachodis.
  8. Heat the oil in frying pan over medium heat ......frying pan should have about one inch of oil.  To check if oil is ready put a little piece of dough in the oil. Dough should sizzle, and come up very slow. 
  9. Fry them on medium-low gas. After they start to puff, slowly turn them over. Fry until golden-brown on both sides. If the kachoris are fried on high heat/gas, they will get soft and will not be crispy.   
  10. Drain an absorbent paper and keep aside.
  11. Deep fry Other kachoris too.
  12. For khasta dal pooris, Skip stuffing part.          
  13.  
Kachodis and pooris are ready. Serve with Curry or any dry sabji or pickle or green chutney.
     


Note:-

(Dal should not be in thin consistency. otherwise it will he hard to knead dough)

Coffe Ice-cream


Coffee ice-cream yields a delicious creamy dessert for coffee lovers.




Ingredients

Heavy whipping cream 1 cup
Sugar 2-3 tbsp
3-4 tbsp coffee
2 tbsp  milk









Method


In a bowl , beat the whipping cream until the cream reaches stiff peak.
You can use hand beater, whisk, or electric beater.



(Bowl, beater and cream should be chilled..)
Add Sugar and whisk it for 2 minutes more.

In a cup/bowl,  add coffee powder and milk. Whisk it for 2 minutes.


Add Coffe mixture into whipped cream and mix well with the help of spatula.
 
You can taste the sugar , if you like you can add more.



Pour this to freezer safe bowl. Cover with lid or any plastic cling for 6-8 hrs or until set.



Cut into slices or scoop the ice-cream.

Enjoy this yummy treat with family and friends.


you can garnish with chocolate sauce, Oreo or grated chocolate.

Bournvita Icecream


Bournvita ice-cream yields a delicious creamy dessert without eggs and ice-cream maker.
Kids friendly, healthy and of course yummy  with only three ingredients.
Enjoy this ice cream with your kids.







Ingredients

Method

Green chutney/coriander chutney for fasting






 



Vrat ki chutney.

its easy to make and you can enjoy this yummy and spicy chutney with sabudana vada, samo rice cutlets, samo rice dhokla , vrat potato , paneer dosa, vrat ki kachodi etc.


Ingredients

1 bunch of cilantro
2 green chili
1 tsp sendha salt
1 tbsp lemon juice
1/2 tsp black pepper
1/4 tsp grated ginger
1 tbsp curd.


Method :-

In the blender , add all except lemon juice and blend until it become smooth. Add lemon juice and add some water if required. blend again and chutney is ready.



Note :- if you eat mint during fasting, you can add
 Adjust spices as per your taste.
You can also add some sugar.

Paneer Kofta Airfryer recipe

Paneer kofta very soft , delicious and super healthy.
No potato, No maida, No cornStarch, No baking powder/baking soda.

No deepfry, no shallow fry

Very simple and healthy Airfryer recipe .

It is very rich , creamy and delicious dish because koftas made from Paneer which is stuffed with dryfruits and gravy is made from cashew , tomato and whole spices.  It goes well with chapati, naan , poori and parantha.

Try this healthy and delicious recipe and share it with your friends and family.



 Ingredients
 For Koftas
1 cup grated Paneer
A pinch of salt

For Stuffing
Some Cashews and some raisins

Oil for greasing

For curry

For puree

1/4 cup Kaju  (cashew)
1 tbsp Poppy seeds (khas-khas)
2 medium size tomatoes
1 small onion
1 green chilli
A small piece of ginger
1 tbsp oil

1/4 inch cinnamon stick
2 clove
1/4 tsp cumin seeds
4-5 coriander seeds






 For Curry
1/2 cup of water or as required
3-4 tbsp cream
A pinch of cardamom powder
1 tsp garam masala powder
1/2 tsp turmeric powder
1/2 tsp red chili powder (also can use kashmiri chili powder)
3/4 tbsp sugar
1/2 tbsp salt (or as per taste)
2 tbsp oil


Method 

 In a plate / bowl , add grated paneer and salt . Mix well. Knead the mixture for 3-4 minutes, until it become soft.
In a bowl, take some raisins and cashew. (You can add coconut powder in stuffing).


Divide the dough into equal parts and give each part a round shape of ball.
Grease your palm lightly with oil/ghee.
Take one ball and flatten it in the center and put 2 raisns and 1-2 cashews pieces and carefully wrap from all the side and make round ball. Repeat the process with other balls and make koftas.

Airfryer time.
no preheat.
You don't require to preheat airfryer .
Just set 160 C for 5 minutes. and keep koftas in airfryer.
after 5 minutes turn and keep it for 2-3 minutes more at same temperature.

Now just for light brown color keep koftas for 2-3 minutes at 180 C.

Since we are not adding any potato, maida or cornstarch, so we don't need to cook for long time.

Your super soft paneer koftas are ready.





Gravy
  • Add all puree ingrdients and add some water. cooked it on medium gas until it become soft and cooked.

    After it cooled down , make puree.
     While making puree add some water if required. Since we have cashews, so for cooking and blending we need some water.
  • Heat the oil and butter in a pan on medium heat. Add some turmeric powder, red chili powder and garam masala . Saute for few seconds. Prepared puree, sprinkle salt and mix. Let it cook till all the moisture is evaporated and it starts to leave the sides of the pan.
  • Add some water and cooked again for 2-3 minutes.
  • Add sugar and cooked it for 4-5 minutes on slow gas.
  • Add cream and cook it for 2-3 minutes. 
  • Sprinkle some cardamom powder.                                                                                                                    
    Gravy is ready . turn off the gas.
  •  
     Serving time. 
    Take serving dish. Add koftas and cover the koftas with hot gravy. Garnish with some cream /paneer.  Enjoy




Since koftas are very soft , so you don't need to cook in th gravy.

Stuffed Karela (Bitter Gourd ) in Airfryer

Stuffed Karela (Bitter Gourd) make a great side dish , or you can eat stuffed paranthas with spicy , yummy stuffed karelas.
Karela have many benefits.
Originally, it cooked in kadai/pan. But I am giving air fryer recipe .
In this recipe, you can find karelas cripsy and fully cooked and super yummy.





Ingredients

6-8 karelas
1 Tbsp salt
2 tbsp lemon juice
Masala(Spices) for stuffing

2-3 tbsp oil (you can use mustard oil/vegetable oil/olive oil)
1 medium size finely chopped onion
1 tbsp green chili paste
11/2 tsp ginger paste
 1/8 tsp asafoetida (Hing)
Salt to taste
1/2 tsp turmeric
1 Tbsp coriander powder
1/2 tsp chilli powder


1 tsp fennel seeds-roasted and coarsely pounded
1 tsp cumin seeds
1 tbsp mango powder (aamchur )


Method :-
1. Wash Karelas thoroughly and scrape off the rough surface of the karela . Set the scrape side. (don't waste).
2. Make a slit in the karelas length wise  and remove the seed.
3. Add karelas, seeds and skin scrape into the bowl or plate . Add salt and lemon juice. and mix all together and each other. Keep aside this marination for 3-4 hrs.
4. Squeeze the karelas, scrap and seeds to remove all the marinade. Wash karelas with water and then squeeze out all the water. Separate the scraping and seeds from the whole karelas.
5.  lets prepare stuffing for Karelas (bitter gourd).
In a pan, add 2tbsp oil , when its hot then add cumin seed, hing .
After the cumin seed crack, add green chili and ginger paste. saute for seconds. Add onion  and saute until it become soft then add all spices and scrap and seed and saute for 2 -3 minutes on medium gas.
Turn of the gas.
Stuffing is ready.
Keep it aside for cool down.
6. Lets prepare the Karelas.

Preheat airfryer at 180 C /350 F for five minutes.


7. Stuff the split karelas with this spice mixture and close properly so spices will not come outside.
(Here I am not using thread).

 Airfryer time

Set the temperature at 160 F for  12 -15 minutes and keep the karelas in the airfryer.

After 15 minute, turn the karelas and keep Karelas for 8-10 minutes.

Now set temperature at 175 F and keep karelas for 5 minutes and turn karelas and keep it for 5 minutes on same temperature.

Keep karelas for 2 minutes  at 180F .

Karelas are ready.

Enjoy crispy, healthy and delicious Stuffed karelas.

You can refrigerated karela for weeks.

 (Make sure quantity and quality of Airfryer might be differ, so check on every temperature).

Kadai/Pan recipe

For pan Karela, you can use thread.

  1. Add 3-4 tablespoons of oil in a sauce pan over medium heat. Spread the stuffed karelas in the pan and sprinkle with salt. Cover the pan and let it cook for about 5 minutes on medium gas.
  2. Turn the karelas over to the uncooked side and cook for about 5 minute. Repeat until all four sides of the karelas are cooked. (It will take time around 15-20 minutes).
  3. If you feel, that karelas are dry then sprinkle some water. Cover the pan and let it cook for 5-8 more minutes.
  4. Remove the lid to see if the karelas are tender. Gently turn them over a few more times, making sure they are covered with the spice mixture.

Paneer Dosa for Fasting (vrat ka dosa)

Vrat (Falahari Dosa)
Who says that Vrat ka khana is boring or laden with oil. 
Buck wheat flour (Kuttu flour) is very healthy and gluten free.
As the recipe does not require any soaking and grinding , its require very less time and effort
.
This recipe produces a crispy buckwheat dosa which is stuffed with Paneer.
Healthy and delicious  Stuffed dosa enjoy with Green chutney, Curd, Potato. 
Complete meal , Stuffing , healthy and easy to make.







 Ingredients

1 cup Kuttu Flour (Buck wheat flour)
Sendha Salt (Vrat ka Namak) as per taste
Black pepper 1/4 tsp
Green chili 1-2 fine chopped 
Ginger 1 tsp grated
Water as required to make smooth batter.

Stuffing
1/2 cup grated Paneer or as required
1 tsp chopped Green chilli
A pinch of sendha salt or as per taste
oil/ghee for cooking


Optional
Green chutney (Vrat ki chutney)
Potato (vrat )
Curd/Yogurt



Method :-

 In a big bowl, add Kuttu flour, Salt, green chili, ginger, black pepper . Mix well.
Add water gradually and whisk it.
Make batter with the flowing consistency.


In a bowl add all stuffing ingredients and mix well.

Take a dosa pan or non-stick pan and put it on low heat, Pour full ladle of heat and spread it in round just like normal dosa.
Now heat oil in a pan. Cook it for a minute and then sprinkle little over and let it cook for another minute. Turn and cook it for 2 minutes. Now place paneer stuffing in the middle and fold it. and serve hot with green chutney , vrat aloo and curd.




\















(You can also stuff potato instead of paneer inside dosas)


Serve hot with green chutney and vrat aloo.
