Besan Dhokla
Ingredients:-
1 cup chickpea/gram flour/Besan
1/4 cup Sooji (Semolina)
3/4 cup warm Water
4 tbsp sugar
11/2 tsp salt
1/2 tsp citric acid
1/8 tsp Turmeric powder
1 1/2 tsp Eno Salt
Oil for Greasing
Seasoning:-
1 tbsp Oil
1/2 tsp Mustard Seeds
2 Green Chilies
1/4 tsp lemon juice (optional)
1 cup water
Garnishing:-
Chopped Cilantro
Grated Coconut
Method :-
Take a bowl .
1) Most important step :-
Sieve sooji,Besan,salt,sugar,turmeric powder and citric acid together in a bowl.
Add water and make smooth paste.
Whisk for 4-5 minutes till sugar and citric acid dissolve.
When the water is boiled , then add eno salt in the besan batter and mix and put on the tray.
Put the tray on steamer.
Steam for 20 minutes.
Check after 20 minutes by any fork or toothpick or knife , if they are coming clear than dhokla is done. Otherwise you can do for more 5 minutes.
(Don't check before 20 minutes)
In the mean time, for seasoning, Heat oil in a small pan, add mustard seeds. When mustard seeds crack, then add green chili. Add water, sugar, salt and lemon juice. Boil for 3-4 minutes on medium gas. Turn the gas off.
Once the dhokla is done, then take the tray out of the steamer , cut the pieces and pour the seasoning,
Garnish with cilantro and coconut
Dhokla is ready to serve and serve with any chutney.
You can also use sev for granishing .
