Bread upma

Bread upma is the combination of veggies, spices and breads.
If you have left over bread slices..this is the best . It is easy to make.



Ingredients :-

1 Onion finely chopped
3-4 curry leaves
1 Tomato finely tomato
1-2 green chili finely chopped
5-6 bread slices
1 tsp salt
1/2 tsp red chili powder
1/2 tsp turmeric powder
1 tbsp oil
1 tsp mustard seeds
half lemon
finely chopped cilantro
Roasted Peanuts (optional)



Method :-

Heat oil in a pan. Add mustard seeds, when it cracks add curry leaves and green chili. Saute for few seconds.
Add onion and stir until it will get brown in color.
Add salt, turmeric powder, chili powder. Mix well.
Add tomatoes and cook it until they will get tender.


Cut the bread into small pieces.

Add all bread pieces into pan. mix well cook for a minute.
Add peanuts. Turn off the gas. Add lemon juice.
Garnish with the cilantro.


Tips :-
More vegetables can add like peas, bell peppers for make more healthy .
Spices can adjust as per your taste.

Baked Mini Kachoris and Samosas

Rainy season or winter season or any season ......

Ingredients:-

For Dough:-

3 cup Maida or All purpose flour
1 cup Oil or ghee 
1 1/2  tea spoon salt
1 tea spoon Ajwain (Carrom seed)
About 1 cup water or  as required

For Stuffing:-

3/4 cup green moong dal (lentils)
1/2 tbsp grinded fennel seeds (saunf)
1 tsp Coriander powder
1/2 tsp red chilly powder
1/2 tbsp dry mango powder (amchoor)
1/4 tsp garam masala 
Pinch of asafoetida (hing)
1tbsp salt (adjust to your taste)
1tbsp oil
1 tbsp water
1/2 tbsp green chili paste
1/2 tbsp ginger paste      
(Spices can adjust according to your taste)



Method:-

Knead the dough ....Take a Bowl , add flour , salt, ajwain . Mix well.
Add oil and mix together until all oil corporated into the flour.
Add water and knead into the smooth firm dough.
Set aside and Wrap by plastic or muslin cloth for 20- 25 minutes.





Stuffing:-



Soak dal for 3-4 hours and drain proper.  
Take a blender , add moong dal, add all spices, green chili paste
Mix well. Blend in a blender .Make a thick paste.
Take a pan . add 1 tablespoon oil .

      Add dal paste in a frying pan and roast on medium heat for about 5 minutes. 

     Turn off the heat. Let the mixture cool off.
      ( If you think the paste is very rigid then add one tablespoons of warm water and mix it well and Let it sit for 10 minutes).


For samosas :-
Divide dough in to equal small bowls.
Roll out each portion in to  thin oval shape.
Divide the oval into two through cut from medium.
Lift one side of the flat edge and brush plain water on it. Lift the opposite side and overlap the  edges to form a cone shape. Press the edges gently
Stuff the dal mixture into the cone. Seal top edge gently.


 

 

 

 







Your samosa are ready ....

For Kachori

Take a big bowl. Roll with the help of roller in thin oval shape or round shape.
With the help of cookie cutter or and cork or lid of any bottle, cut small round part.
 Stuff the dal mixture and fold properly with every edge of kachori.
Your kachoris are ready.


 

 







Preheat the oven at 350 degree (F)
Now take any oven tray or plate , grease with little oil....Put all kachoris and samosas and keep the tray in oven for 20 minutes.

After 20 minutes , turn the samosas and kachodi......and keep it back in the oven for more 20 minutes.
Your kachori and samosas are ready.




Serve hot with the green chutney or tamarind chutney or sweet chutney....

Apple walnut salad

Apple walnut salad is very healthy.




Ingredients:-
1 Apple
1/2 cup Walnut
1/4 cup Grapes (Optional)
1 tbsp chaat masala
1 tsp black salt
1/2 tsp black pepper powder
1 tsp lemon juice
1/2 cup finely chopped cilantro



Method:-

Chop apple in to small pieces
chop walnuts
divide the grapes into half part (its optional ..you can use whole grapes)
Take a bowl , add chopped apple, walnuts, grapes , and mix well.
Mix all spices , juice and cilantro. Mix well
your apple walnut salad is ready.

Medu Vada



 Medu Vada is a South-Indian dish. It is combination of dal and spices. It is crispy from outer side and soft from inner side.







For 8-10 pieces

Ingredients:-

1 cup Urad dal
2 1/2 tbsp Rava or semolina or sooji
1-2 chopped green chili
1/2 tbsp ginger paste
1 1/2 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp black pepper powder
1 tbsp coconut powder
Oil for deep frying
1 bowl water
1-2 Ziploc  bag

Method :-
Soaked the dal for four hours and grind dal in a grinder to make the batter. Make sure dal batter should be thick.


(For medu vada, we need thick dal batter so while grinding add only 1-2 tbsp water(if required)).

Take out dal batter in a bowl , add semolina , baking soda and baking powder and mix well.
Beat dal for 4-5 minutes.(With the help of hand or you can use beater)
 Add salt , blackpepper, green chili , ginger paste and coconut powder. Mix well 2-3 minutes more.

Heat oil in a pan for deep frying.

Take a plastic bag , open it from the sides.


Take a small ball from the dal batter.
Put it over the plastic.

With the help of water spread it.

With the help of finger , hole it in the between.


Then flip the pastic and turn the vada on your hand and dip in the oil ...and fry it.
Oil should be medium hot not very hot otherwise vadas will become quickly brown but uncooked from the inside.






Fry all the vadas this way till they become evenly brown in color and crisp.




Serve vadas with the hot Sambar and Coconut chutney.
