Dry fruits laddu (mewa laddu)

Dry fruits laddu...No sugar ....You can make laddu within minutes....
You can make these laddu on any occasion....
Everyone can enjoy these healthy laddu..


                               


Ingredients:-

1/2 cup Almonds
1/4 cup cashews
1/4 cup pistachios
6-8 dates pitted
4-5 raisins
1/4 tsp cardamom powder (optional)
1 tsp ghee




Method :-

Heat ghee in a pan ,
add all nuts and dates
roast for 1-2 minutes.
 
Keep it aside for room temperature.

Blend it in a blender








Take out in a bowl
Take small portions and make them to balls.

Fusion Salad

Sprouts Vegetable salad
Fusion salad combination of Indian and Italian spices
This salad is very yummy and healthy.
A great combintaion of  protein, fiber and vitamins.



This is a flavorful and crunchy vegetable salad tossed with home made vinaigrette dressing.


Sour and sweet taste make this salad very delicious...


Vinaigrette dressing

Vinaigrette is the french word ..this dressing is made by mixing an oil and something acidic such as vinegar and lemon juice.
In this dressing we can use many types of vinegar like  red white vinegar, white wine vinegar, Baslamic vinegar etc.





It is very healthy and filling salad.
Its really help in weight loss .


Try this colorful, healthy and delicious salad.....


Ingredients


1 1/2 cup moong sprouts
1 cup spinach leaves (optional)
1 cup of cherry tomatoes (or any tomatoes)
1 cup of chopped green bell pepper
1 cup chopped cucumber
1 chopped Avocado
1 cup of chopped green bell pepper


1 cup of chopped Yellow bell pepper


1 cup of chopped Red bell pepper
2-3 Oranges
1/2 cup finely chopped cilantro


For dressing

3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
salt to taste
1/2 tsp black pepper powder
1/2 tsp dried oregano
1/2 tsp red chili powder
1/2 tsp black salt



Method :-



  1. Whisk the vinegar, salt ,oregano, black salt, red chili powder and pepper together in a small bowl. Whisking constantly, add the oil in a slow, steady stream and continue whisking until thickened.


In a large bowl ,


add vegetables, fruits and sprouts

 Mix well.

Add dressing and mix gently.

Add cilantro.


Keep it aside for 30 minutes.


Eat healthy salad :)

Lauki kofta

My first air fryer recipe
Healthy Lauki ke kofte ...
No deep fry, No creamy gravy .....
This is a nice recipe for weight watchers..
you can have this without disturbing your diet plan..
Its really a finger-licking dish...
Enjoy this with rice, chapati or parantha.

 Lauki koftas curry in which koftas are deep fried and gravy made from cashews and tomatoes...

But I am giving here healthy way of koftas...so you can enjoy tasty and healthy lauki koftas without any guilt.


  



Ingredients

For Koftas

1 Bottle gourd (Lauki)
1/4 cup Besan (Gram flour)
1/2 tsp turmeric powder
1/4 cup corn flour or corn starch
1/2 tsp Salt or as per taste
1/2 tsp green chili paste
1/2 tsp ginger paste
1/4 finely chopped cilantro

1 tsp oil

For curry

3 Medium size tomatoes (roughly chopped)
1 onion (roughly chopped)
1-2 green chili
1 tsp ginger paste
1/2 tsp turmeric powder
1/2 tsp Kashmiri red chili powder
1/2 cup blend yogurt (curd)
Salt to taste
1/2 tsp Garam masala powder
1/2 cup or as needed water
1 tbsp oil
1 tsp cumin seed
A pinch of asafoetida (hing)
1 tsp sugar




Method

Peel and grate Lauki (bottle Gourd) . Squeeze out the water completely and keep that water for making gravy.


Take squeezed grated lauki in a bowl . Add Besan flour, turmeric powder, corn flour, salt, green chili and ginger paste, cilantro. Mix well.

 

Mixture should have thick consistency...no water..
If you think the mixture is little watery then you can add more besan.


Grease your hand ....and make the round shape ball or as desire shape.

Now its time to AIR FRYER...:)

Set air fryer on 180 C  for 5 minutes.
When preheat the airfryer.
then keep the foil ...grease with little oil and place the koftas on the foil.






Keep it in air fryer . Set 160 C  for 10 minutes.
Check


After 10 minutes ..grease the koftas with little bit oil.


and  Turn the koftas ..set 160 C for 10 minutes more.
Check

After 10 minutes...set 180 C for 5 minutes.
Check

Koftas are ready...


Curry Time:-

Heat one tbsp oil in a pan.
Add cumin seed, when it cracks add hing., and green chili and ginger .Add turmeric powder, kashmiri red chili powder,   Add tomatoes and onion .
Add 1/4 cup water and cook it for 5-6 minutes on medium gas.

Turn off the gas. Cool completely and blend in a blender.
Make puree.


Now take the pan.(you can use the same pan).
 Turn on the gas ... When pan is hot.. Add puree...
cook it for 5 minutes on medium gas. Add curd and water .
Cook it more for 3 minutes.
Add garam masala and water.

Add sugar and cook it for 2 minutes more.
(You can add more water as per your taste).

Add koftas and cover with the lid.
Turn off the gas.
(If koftas are little hard so you can cook koftas in gravy for 1-2 minute).
Garnish with cilantro...
Serve with chapati or rice.



 








Tips :-


1) Make sure Grated lauki squeezed completely.
2) Don't waste that squeezed water, you can use this water in curry.
3) If you think that mixture of koftas are little watery you can add besan flour or one boiled potato.
4) You can adjust spices as per your taste.
5) check the consistency of gravy as per your wish.
6) Check your Air fryer setting before using it......
7) If you want to make creamy gravy , you can add cashews and cream.
8) You can deep fry the koftas as well.

So enjoy healthy koftas
