Nutrela Vegetable Briyani

Nutrela vegetable Briyani  is little spicy, healthy and delicious briyani....
Serve with yougurt or vegetable raita






Ingredients

3/4 cup rice 
3/4 cup nutrela chunks
1/2 cup peas
1/2 cup cauliflower florets
1/2 cup cjopped green beans
1/2 cup chopped carrot pieces
2 finely chopped onions 
1 potato chopped into small cubes
1/2 tsp coriander masala
1 tbsp Briyani masala
1 tsp Garam masala 
1/2 tsp red chili powder
1/2 tsp turmeric powder 
Salt to taste 
1/2 cup thick curd
1 tbsp green chili paste or 1-2 finely chopped green chili 
1 tbsp ginger paste
Some finely chopped cilantro 
4-5 saffron string soaked into 3 tbsp warm milk 
1/2 tbsp lemon juice
2-3 tbsp oil or ghee


Method

Wash and Soak rice for 40-60 minutes.
In the mean time chopped all vegetables.
 
Wash all vegetables except onion :)  and keep it aside for few minutes so vegetables will become dry .
Take a pan add 2-3 cup water and add salt and add nutrela chunks. Cook it for 4-5 minutes . Drain it completely .
 
Take a pan for boiling  the rice 
Add 4-5 cup water and add salt and 1 tsp oil.
When water get boiled then add rice
And cook it . Don't cook rice fully just cooked 3/4 .
Now drain all water and covered with the lid 


Saffron milk 
Now take another pan
Add 1 -2 tbsp oil  when it become hot add green chili and ginger paste .

Stir it for few seconds. Add Onions and cook it for few seconds. Add coriander powder , salt , red chili powder , turmeric powder and 1 tbsp Briyani masala .....
(Spices can adjust as per your taste how much spicy you want )
Stir it few seconds 
Add all veggies (except potato) and mix well 
Cool it in medium high gas for 4-5 minutes ... Stir it continuously ( if you cook on medium gas or low gas then vegetables will leave water and we don't want water n also we want crispy vegetables)
Now add potato and nutrela chunks . cook it on high gas for 3-4 minutes .

When ever your veggies get 3/4 cooked then add curds and mix well and cook it on high gas to 3-4 minute . Keep eyes on gas otherwise vegetables can burn 










Turn gas into low flame. Take half of vegetables from pan and keep it another bowl. Now divide the rice in two parts. Take one part of rice and spread on vegetables in the pan.
Spread saffron milk over the rice ...some cilantro and sprinkle some briyani masala over it ....

Now spread another layer of vegetables and then rice then saffron , cilantro and little bit of briyani masala


Now cover pan with aluminum foil tightly and then cover with lid
First five minuted cooked on medium gas then cooked 10-12 minutes on low medium gas.


Turn off the gas. Remove aluminum foil . Add lemon juice.



Enjoy spicy , yummy and healthy vegetable nutrela Briyani.






Note :-

You can take vegetables of your choice.
You can adjust spices as per your taste.
Whenever you  are cooking vegetables , gas should be on high flame.
I am not using here fried onions, if you want you can use it

Cucumber cup filled with corn salad

Cucumber cup filled with corn salad is easy to make and yummy in taste ...
It is healthy , colorful and great snack 




Ingredients 

1 large cucumber 
1/2 cup corns
1 medium finely chopped tomato
Some finely chopped cilantro
1 tbsp of lemon juice 
Salt to taste
1 tsp chaat masala
A pinch of black salt 

Method 

Peel the cucumber and remove the ends and cut the cucumber into 1/2 inch thick slices .( it will be thick 6-7 pieces).


Scoop out seeds with a small spoon or Mellon baller , leaving bottom intact to form a cup .



(You can eat these seeds also or add in any salads )

Now take a bowl ... Add corns , tomatoes , cilantro , salt and lemon juice . Mix well .

Take cucumber cup and filled with corn salads . Sprinkle some black salt on the cups . 

Your cucumber cup is ready to serve enjoy .



 You can also add boiled chickpeas , sprouts , kidney beans etc 
Also can add mint , parsley etc
If you like onion you can add it

Gol Gappa puri

Golgappe/panipuri/sev puri are famous street chaat...
And we need Puri for all above things...
So here simple recipe of  puri 




For 25-26 Puris
Ingredients

1/2 cup Sooji 
1/4 cup maida/All purpose flour
1/2 tsp salt
A pinch of baking Soda
Water to knead the dough as per required

oil to fry


Method 
Take a bowl , Add Sooji , Maida, Baking Soda and salt . Mix properly.

Now Add water gradually and knead the stiff dough.



Grease your hand with 1 tbsp oil and knead the dough again for 1-2 minutes .
Cover it with damp cloth for 20 minutes.

Take the dough...divide into very small balls....
Roll it one by one 




Heat oil in pan on medium gas for frying the puris.
When oil is medium hot then take 5-6 puris and slide them gently in oil.
* Do not drop together...do it one by one....
Press Puri  little with spatula to puff them up.



Or you can roll 5-6  puris and then  fry....
Fry on medium gas until it become crispy and light golden in color
Your puris are ready...





You can enjoy puris as Pani puri or sev puri ............

Dahi bhalla or dahi vada

Dahi Vada or Dahi bhalla is a famous North India street chaat....
It is made from Urad dal .....




For 20-25 pieces 

Ingredients 

11/2 cup Urad Dal 
1/2 tsp of salt
2-3 tbsp of cashew pieces
8-10 pieces Raisins
A pinch of hing


For chaat
(Your choice)
Yogurt
Sweet chutney
Green chutney
Black salt
Roasted and grinded Cumin powder 
Red chili powder
Chaat masala
Sev 


Method

Wash and Soak Dal for 4-5 hrs into water and grind in a grinder with 1-2 tsp water.
Dal batter should be thick .
Beat the  Dal for 8-10 minutes with the help of hands...... Beating is the most important step.....It makes dal fluffy..and Vadas will be soft .

Add hing,salt , cashews and raisins and mix well.



Heat oil in a pan for deep frying 
Take small or big (according to your desire ) ball of dal and drop it into medium hot oil.
Fry it on medium gas until it become golden brown in color.




Now take out vadas from oil ....
and put it into water.......


Squeeze it properly and keep it into blended yogurt ...(yogurt should be in medium thick consistency)
and leave the vadas into yogurt for 5-8 minutes.


Now Add Sweet chutney , green chutney, roasted cumin powder and sev for garnishing....
Enjoy dahi bhalla chaat




Shahi toast / shahi TuKda

Sahi Toast is delicious dessert......it is made from bread and covered with layer of rabdi





Serving 20

Ingredients

10 Bread pieces (I am using brown bread)
oil/ghee to fry

For Sugar syrup
1 cup sugar
3/4 cup water
 1 tsp cardamon powder


For Rabdi
1 pint or 473 ml  heavy whipping Cream or full cream
2-3 tbsp sugar or as per taste
2 tbsp shredded Paneer
some chopped dry fruits (cashew, almonds, pistachio)
1 tsp Cardamom powder
3-4 string of  Saffron




Method

Heat oil/ghee in a pan for fry. Oil/ghee should be medium hot.

Just cut the breads diagonally into two pieces

fry them on medium gas until it become crispy and golden brown in color.




Now make the sugar syrup
Take a pan add water and sugar and stir it until one thread consistency occur.
Add cardamon powder.
Turn off the gas.




Now take one piece of bread put it into sugar syrup  for 8-10 seconds and then keep bread in another bowl or plate.
Follow the same procedure with other bread pieces.

Now keep bread aside for cool temperature or you can put it in fridge for 2-3 hrs..(It will be become more crispy)

Now make rabdi

Turn on the gas. Take a pan . Add cream , sugar and paneer ..boil it for 6-7 minute on medium gas or until it become thick.
Add chopped pistacio, dry fruits and Saffron string..boil it for 1-2 minutes more..turn off the gas.
Keep aside for cooling and after you can put it also in fridge.


Spread one table spoon of rabdi  on bread and garnish with some dryfruits(optional)

Same with rest

(After sugar syrup process you can keep bread in freeze and when ever you want to eat just take out from fridge and spread rabdi and serve it.  so bread will not be soggy it will still remain  crispy.)
