Sesame and Jaggery Chiki or til gur ki patti

Til Gur ki chikki or Patti is a winter sweet which can be eaten during winters but usually make on the makar sankranti and Lohri festival.



It is very nutritious because of the combination of sesame(Til)  seeds and jaggery(Gur), both of which are good sources of iron.

It is brittle in texture , easy to make and of-course yummy in taste.
So enjoy winter delicacy.

Ingredients 

About a cup of jaggery
11/4 cup of sesame seed
2 tbsp ghee

1 rolling pin
sharp knife or pizza cutter
1 parchment paper /butter paper / or greased plate.

Method 

Heat a pan. Add sesame seeds.
Roast the seeds for few minutes on medium gas until it become light brown in color.
(Don't over roast the seeds until they can become bitter in taste.)


Now take seeds in the plate.
Use same pan , add 11/2 tbsp ghee. Add jaggery pieces.
Once the jaggery pieces start melting, stir it with the pan.
When it completely melt then cook it for 2-3 minutes and stir continuously.


Now add Sesame seeds and mix well. Turn off the gas.

Now take butter paper or parchment paper or any plate or tray.
Grease it with ghee. Spread it evenly.(Make sure mixture is hot, cool mixture wont be spread easily).
Now take rolling pin, grease it with ghee and then start rolling , roll it as much as you can.

Cut the spread mixture into square shape or any desired shape with knife or pizza cutter.


Let the chiki is cool down .
Now pick the chikis with the help of knife and keep it in the plate.
Enjoy healthy and delicious chiki




Tips:-
1) The mixture should be hot during rolling and cutting.
2) When you add sesame in jaggery , and find that jaggery is more than you can add sesame more.

Stuffed Moong dal Rolls

Stuffed Moong dal Rolls  
There are so many things about these rolls,

1) Healthy
2) Delicious in taste
3) A great Appetizer/Breakfast/Snack
4) Best option for Party appetizers : You can make it in advance .




                            

During the party just heat up in skillet or in oven. In 2 minutes your party appetizer is ready.
So here is the recipe of Delicious Stuffed Moong dal Rolls

Ingredients

1 cup green split moong dal
1/2 tbsp salt
1 tbsp green chili and ginger paste
1 tsp red chili powder (optional)
1 tsp Coriander powder
1/2 tsp mango powder

For Stuffing

1/2 cup crumbled paneer
1/2 tsp of salt
1/4 cup grated carrots
1/4 cup finely chopped cilantro
1/4 cup finely chopped bell pepper
a pinch of red chili powder

Oil for cooking



Method :-

Wash and soak the dal for 3-4 hrs. 
Then Drain it well and grind in a grinder with 1/4 cup water.
Make a smooth batter. 


Take out dal in a bowl . Add all spices and mix well.
* If you think that batter is thick then you can add water (Batter should like dosa batter)

                               

Now prepare stuffing .
Take one bowl . Add all stuffing ingredients and mix well.

Now heat a skillet or pan. Grease the pan .
When the skillet is hot then turn the gas on medium and spread a ladle full of batter to a thin disc. Sprinkle little oil and cook on medium gas till the underside is done.

Then flip it . Sprinkle some oil and cook it on the other side too. Cook it from both sides until it become golden brown in color.

*When it is done for crispness  you can cook it on high gas for 1-2 minutes.


Now spread the 2 tablespoon paneer on one side then fold it as in a roll.
* Be careful while doing this step because skillet and roll both are hot.


Take out roll from the skillet and keep it on the plate. Then cut the roll into 4-5 pieces from the sharp knife.


Stuffed Moong dal rolls are ready.
Garnish with Paneer and carrots.
Serve hot rolls with green chutney or sweet chutney





Tips :-

1) You can use yellow moong dal instead of Green moong dal
2) You can take potatoes, onions, tomatoes, cauliflower etc for stuffing.

Rajasthani Dal Baati & Churma

Rajasthani food is incomplete without Dal Baati. It comes on the top of list in Rajasthani food items.
Flaky baked dough balls served with spicy Panchratan (made from five dal/lentils) Dal



Baati can be make in Oven , Tandoor, Gas Oven or Frying process.



Here I am making Baatis in Oven

Panchratan dal made from mixture of five dal. It is spicy and yummy in taste basically masaladar, tadkedar dal.  :)
 We can enjoy this dal with bati, rice, chapati, stuffed paranthas.
Dal bati is incomplete without green chutney, Onions and lemons.

Ingredients 

For Baati

Around for 14 Batis

2 cup wheat Flour
1/4 cup semolina or sooji
 1/4 cup Besan or Gram flour
1/4 tsp baking soda
1 cup oil/ghee
1 tsp Carom seeds (ajwain seeds)

about 3/4 cup water or as required



For Panchratan dal

1/4 cup Moong dal
1/4 cup Toor dal
1/2 cup Urad dal
1/2 cup  Chana dal
1/4 cup Red Masoor dal
1 tbsp salt
1 tsp turmeric powder

2-3 finely chopped tomato
1-2 finely chopped onion
2-3 finely chopped green chili
1 tbsp ginger paste
1/2 cup finely chopped cilantro or coriander

2 tbsp ghee
1/2 tbsp Garam masala
11/2 tsp Coriander power
1/2 tsp red chili power
11/2 tsp cumin powder
1 tsp cumin seed
1 tsp mango powder
A pinch of Asofetida
1 tbsp lemon juice


Method 

Panchratan dal


Wash and soak all the dals together.
Put the soaked dal in the cooker with 2-21/2 cup water with salt and turmeric powder.
Close the lid of cooker and cook it on medium gas until 2 whistle come.Turn off the gas . (like any normal dal)

In a pan, add ghee . When ghee is hot then add cumin seed.
When cumin seed start cracking, then add hing, ginger paste and green chili .
Stir it for few seconds.

Add onion and mix well . Add 1 tsp salt and cook it on medium gas for 3-4 minutes.
Add tomatoes and cook it  on medium gas for 4-5 minutes or until it become tender.

Now add all spices and stir it for 2 minutes.
Add dal and add 1/4 cup water or as require and cook it for 4-5 minutes on medium gas. (covered pan with the lid).

* you can adjust spices as per your taste
* you can adjust quantity of water according to consistency of dal
* Onion is optional 

Add lemon juice . Turn off the gas.
Garnish with cilantro

Serve hot with Chapati, naan, rice and of course Baati


Baati recipe

In a bowl, Add wheat flour, Sooji, besan and salt and baking soda . mix well.
Add oil and mix well. Add water gradually and knead the dough .(Dough should be little firm ).

Keep aside for 20 minutes.


Oven

Preheat the oven to 350 degree F
Divide the dough into equal parts and roll them into balls (like ladoo) . They will not be very smooth balls, and can have cracks all over or partially. It will help to bake the baatis from inside and outside evenly.

Flatten the round lightly using your thumb to make an indentation in the center of baati.

Arrange the baatis on cookie sheet. And grease lightly with the ghee/oil
Keep them in the oven for 25 minutes then turn them and keep them for 20-25 minutes until baatis are golden brown .




Baatis are ready



Churma

Now the baatis are ready ..
Break baatis into grinder and grind them into fine powder.
In a pan add this mixture and add 2-3 tbsp ghee and corasely grinded Almond powder.
in a plate take it out and keep it aside for cool.


Serve Hot Dal baati with green chutney , onion salad and Lemon...
For Extra yummy taste  dip Dal baati in melted ghee and enjoy




Deep Frying :-

You can deep fry baatis in medium low gas ....It will give you a different unique taste.

Oats and Paneer cutlets


Oats and Paneer cutlate
If you got bored with the salad, boiled food and soup during dieting, and want some yummy but healthy so this is a good option.
Oats and paneer cutlates are packed with protein and fiber. You can eat this in breakfast and snacks. You can enjoy these cutlates without disturbing your weight loss plan. It is best for kids lunch.
Everyone can enjoy this.
It is healthy , yummy in taste and easy to make .


                                



Ingredients

About one cup cooking oats
About 3/4 cup grated or scrambled paneer
1 medium size finely chopped onion
1-2 finely chopped green chili
1/4 tsp ginger paste
Salt to taste
1/4 cup finely chopped cilantro
1/4 cup finely chopped bell pepper
1/4 cup water
2-3 tbsp oil for shallow fry
1 tsp chaat masala
1/4 tsp Mango powder
1/2 tsp corainder powder

Method
In a bowl add oats , paneer, onion, salt , cilantro, bell pepper, green chili, ginger paste, chaat masala, mango powder, coriander powder  and mix well .
  
try to make a dough . It can be firm because of oats so mix water as required and make dough.
Grease your palm with little oil and make balls and give them round shape and press lightly.
Heat the pan or skillet. Place the cutlates on the skillet and cook it on medium heat.
  
Put some oil on the tikkis. Cook it for sometime (3-4 minute aprox) then turn them ..put some oil and cook them. Turn again and again (press lightly from the spatula during cooking) until become golden brown and crispy in color. (It will take around 12-15 minutes approx)



  
Serve hot oats and paneer cutlates with green chutney and ketchup

                                                 








Tips:-

You can add more vegetables as your choice like carrots, cauliflower , potato etc.
Spices can adjust as per your taste

Cabbage soup (one Pot recipe)



            
Cabbage soup 
I am presenting cabbage soup in different manner.
No Blending, no mess, only one pot recipe.
It is very delicious and healthy soup. 
No cream , only lots of vegetable which makes soup very filling.
It is best for who want to lose weight.
It is very easy to make and easy in digestion.
In winters you can enjoy this soup any time.


                                              
Ingredients

About 2-3 cup roughly chopped cabbage
About 11/2 cup fine chopped celery
About 1 cup fine chopped green bell pepper
1 medium size onion fine chopped
2-3 tomatoes chopped
1 tbsp salt or as required
1 tsp black pepper or as required
1/2 tsp Italian herbs (optional)
1 tbsp lemon juice
1/2 tsp oregano (optional)
1/4 tsp Black salt


Method

Prepare all vegetables.


Take a pan. Add 1 tsp olive oil (you can use any oil or butter).
Add onion, celery, bell pepper , salt , black pepper .
Mix well and stir for 3-4 minutes.
then add tomato and cabbage .
Add 2-3 cup water and cover with lid. boil it for 10 minutes.


Add Italian herbs, orgenao, black pepper, black salt. Mix well boil it for 2 minutes more. 
Turn off the gas. Add lemon juice .

Serve hot with croutons/Wonton strips. Enjoy 






Tips :-
1) You can add vegetables of your choice like peas, broccoli, cauliflower ,carrots etc.
2) You can adjust spices and salt as per your taste
3) Italian herbs, oregano are optional for increasing the taste of soup
4) You can add any herbs of your choice.

Oats Bhurji

Oats bhurji
If you got bored with egg bhurji and paneer bhurji and want some healthy and yummy option
try this oats bhurji. It is easy to make and yummy in taste. You can eat it with chapati or parantha.




Ingredients

About 1 cup cooking oats
1 tbsp oil
1 tsp Mustard seeds
1 medium size finely chopped onion
1/4 cup finely chopped green bell pepper
1/4 cup boiled peas
1/2 tbsp salt or as required
1/4 cup finely chopped or shredded carrots
1 medium size finely chopped tomato
1 finely chopped green chili
1/2 tsp turmeric powder
1/4 cup finely chopped cilantro
1/2 tsp lemon juice or as required
1/2 cup water
Some peanut for garnishing (optional)

Method

Take a pan and roast the oats for 2 minutes on medium gas.


Now take roasted oats in the plate.
Use same pan
Heat 1 tbsp oil in a pan.
When oil is hot add mustard seeds,
After few seconds add green chili.
After few seconds add onion and bell pepper. Stir it for 1 minute.
Then add salt and turmeric powder. Add peas, carrots and tomato and cover with lid.
Stir for 2-3 minutes on medium gas or until vegetables become tender.

Now add oats and 1/2 cup water and cover it and cook it for 2-3 minutes on medium low gas.

Turn off the gas. Add cilantro and lemon juice. cover with lid.
Garnish with peanuts
Oats bhurji is ready . Serve hot
