Oats Bhurji

Oats bhurji
If you got bored with egg bhurji and paneer bhurji and want some healthy and yummy option
try this oats bhurji. It is easy to make and yummy in taste. You can eat it with chapati or parantha.




Ingredients

About 1 cup cooking oats
1 tbsp oil
1 tsp Mustard seeds
1 medium size finely chopped onion
1/4 cup finely chopped green bell pepper
1/4 cup boiled peas
1/2 tbsp salt or as required
1/4 cup finely chopped or shredded carrots
1 medium size finely chopped tomato
1 finely chopped green chili
1/2 tsp turmeric powder
1/4 cup finely chopped cilantro
1/2 tsp lemon juice or as required
1/2 cup water
Some peanut for garnishing (optional)

Method

Take a pan and roast the oats for 2 minutes on medium gas.


Now take roasted oats in the plate.
Use same pan
Heat 1 tbsp oil in a pan.
When oil is hot add mustard seeds,
After few seconds add green chili.
After few seconds add onion and bell pepper. Stir it for 1 minute.
Then add salt and turmeric powder. Add peas, carrots and tomato and cover with lid.
Stir for 2-3 minutes on medium gas or until vegetables become tender.

Now add oats and 1/2 cup water and cover it and cook it for 2-3 minutes on medium low gas.

Turn off the gas. Add cilantro and lemon juice. cover with lid.
Garnish with peanuts
Oats bhurji is ready . Serve hot



Tips:-
you can add vegetables of your choice

Moong Dal Patties or Tikkis ( Patties from Leftover)

This is a different type of patties or tikki. 
Whenever we have some leftover , we don't want to waste it. 
And always we find some solution to use leftovers in different manner.
And if solution is healthy then it will be like the icing on the cake.

I have some boiled whole green moong dal which I made for salad, but i bored of eating salad, so i have around 3/4 cup boiled moong dal and carrot peas potato dry vegetable (gajar matar aloo ki sabji ).

I want to make something healthy and definitely yummy in breakfast.

So 
I made patties from moong dal and dry vegetable.

Very simple  recipe, easy to make and yummy in taste. 
These patties are packed with protein and fiber. 


                       



Ingredients


3/4 cup boiled moong dal (leftover or you can make from the fresh as well)

1/2 cup Carrot peas potato dry sabji (leftover or you can use fresh boiled carrots, peas and potato)
(or you can use any left over vegetable)

1 finely chopped onion

1 tsp salt or as required
1-2 finely chopped green chili
1/4 cup finely chopped cilantro
1 oats bread ( you can use any bread , I am using it for healthy option)

(if you want to add spices , you can add... i am using left over vegetable so i don't need to add more spices)

oil for shallow fry

Method 


In a bowl or tray, add boiled dal and vegetable 

Mash it properly add salt, green chili and cilantro.
mix well.
Add bread and mix well.




Divide into equal balls and  give them round shape to make pattie or tikki

Heat the pan or skillet (Tawa).Place the  tikkis on the skillet on medium heat. Put some oil on the tikkis. Cook it for some time (3-4 minutes approx ) then turn them ..put some oil on it . And cook them. Turn again and again until tikkis become golden brown and crispy.






Tikkis should be cook on medium gas. 
(it will take 10-12 minutes approximately)  .


Your Tikkis are ready from left overs.






Tips:-

Here I am not using bread crumbs because of healthier option, if you want you can use it.

Whenever you are cooking these patties, please careful because it can be break while cooking.
You can add poha, other vegetables.
You can make burger with these patties

Whole green Moong Dal salad

Whole Green Moong Dal salad is healthy salad or appetizer.
You can enjoy this at any time. 
Generally we use this lentil for making sprouts....but we can eat it in other manner too.
It's a simple , colorful , yummy and healthy recipe . 
#No oil recipe






Ingredients

1 cup Whole green moong dal
(Soaked for an hour )

Vegetables
1 medium size finely chopped tomato
1 medium size finely chopped onion
1 medium size finely chopped cucumber
1/2 cup finely chopped cilantro
1-2 finely chopped green chili
2 tbsp lemon juice or as required
1/2 tbsp salt or as required
1 tsp Black salt or as required
1/4 tsp roasted cumin powder (optional)
1/4 tsp red chili powder (optional)


Method

Wash the whole green moong dal and soak the dal in two cups of water for an hour.
Then drain and cook the dal with four cup of water in pressure cooker.(it will take 1-2 whistle on medium flame)

Allow to cool . Strain the water into another pan. (It you want to use this water you can use in soup or kead chapatis)

Retain the cooked moong dal. Let them cool to room temperature .
Now in a bowl add moong dal, all vegetables, spices , salt and mix well.
Your easy salad recipe is ready.

If you want cold salad you can keep it in freeze for chilled.

Couscous Salad

Couscous (pronounced Koose-Koose) is made from steamed small balls of semolina . It is very famous in Mediterranean food and all over the world. Here I am presenting couscous vegetable salad which is very healthy..No cooking recipe ....Everyone will love it. It is packed with protein and fiber. It is colorful and healthy salad in 2 minutes. 
No cooking recipe, no mess ....

Ingredients
1 cup  Couscous
11/2 cup boiled water
1 cucumber peeled and chopped into small cubes
1 tomato finely chopped
1/4 cup spring onion finely chopped
1 green chili finely chopped
1/4 cup finely chopped cilantro
1/2 tbsp salt (or as per taste)
1 tbsp lemon juice (or as per taste)
a pinch of red chili powder
1/2 tbsp extra virgin olive oil (optional)
1/2 tsp black pepper(or as per taste)


Method

In a bowl, add Couscous, and Boiling Water. Mix well, cover and keep aside for 10 – 15 minutes. (You can boil water in microwave ).





Allow it to cool  for 5 minute.
In the mean time you can prepare all the vegetables.
Now take couscous bowl. Add oil and mix well. 
Add all vegetables, salt, black pepper , red chili powder and lemon juice.....Mix well



Your 2 minute salad is ready...
If you want to eat cold salad then keep it in freeze for 30-45 minutes....cold salad is ready


Tips

You can add any vegetables as Zuchini,  bell peppers.
You can use any herbs like basil, parsley etc.
