Eggless Basbousa (Semolina and coconut cake)

Basbousa  is a traditional Middle Eastern sweet cake. It is made from semolina (sooji / Rava)  soaked in simple simple sugar syrup.


Here I am  making  Semolina and coconut cake  .
 Its very simple to make .
Semolina , coconut and yogurt (Curd) are important ingredients to make this cake.
No  Egg, No flour and no condensed milk.
You can add mango, chocolate for more  flavors.
You can add almond, pistachios or cashews according to your choice.


Its very yummy in taste and healthy too .
You can make this sweet on any festive as well, since its eggless and very easy to make.





Ingredients :-


2 cup Semolina(Sooji )
1 cup coconut powder/ dessicated coconut
1/2 cup olive oil/butter/ (half butter and half oil ) 
1/3 cup Sugar

1 tsp baking powder

1 cup yogurt (curd)
2-3 tbsp pistachio coarsely powder
Yellow color /Saffron (optional)

Sugar syrup
 2 cup Sugar
11/2  cup water
A pinch of cardamom powder
1 tbsp lemon juice

 
Garnishing 
Some pistachios/Almonds






Method 


Preheat oven to 375 degree F
Grease container with the oil/butter.
Mix the semolina, coconut, sugar and the oil in a large bowl. Use your hands to incorporate the oil/butter with the other ingredients until mixed well.
In another bowl add baking powder and curd and whisk it . Add the yogurt mixture into semolina mixture  and continue mixing with your hands until fully combined.Add Yellow color and mix well. The mixture should be fairly thick and easy to press with hands (not thin like cake batter).





Pour the batter into container and sprinkle some pistachio powder over it.
Bake at 375 F  for 40-45 minutes.





After baking take out cake from the oven.


Prepare sugar syrup .
Mix water and sugar in the  sauce pan and place the pan  on the high gas.
When sugar dissolve and started getting thick then add cardamom powder and lemon juice. 
Turn off the gas.

Cut the cake into desire shape and Pour sugar syrup over the cake .

Your basbousa is ready.





Serve and enjoy and share it with your friends and family.
