Strawberry Crush/Puree

Strawberry is known for its characteristic aroma, bright red color, juicy texture, and sweetness. It is consumed in large quantities, either fresh or in such prepared foods as preserves, juice, pies, ice creams, milkshakes, and chocolates.
          




This is the first time I made Strawberry crush from scratch with no preservatives and no food color  and that crush I am going to use for cake, ice-cream, shakes, juice, Lemonade etc.

I believe you have to use Sodium Benzoate for the preservative if you want to store for a longer period. I made it 2 weeks ago and it is still keeping good despite not using the preservative.




How we can preserve Straw berries for longer period of time ?


In spite of keeping Strawberry in the fridge, they become mold or worse within a week.
But if you want strawberry fresh for more than a week then use this way ...

Take a bowl Add 2-3 cup of water (Depend how many strawberries do you have?)
Add 3-4 tbsp Apple vinegar and then mix.

Now wash Strawberry in this bowl and drained and put another container and keep it fresh for longer periods.

This method will definitely help you to  keep the strawberry fresh and tasty.



Homemade Strawberry Crush :-
Here is the very easy homemade Strawberry crush recipe.


Ingredients 

4 cup of Strawberry
8 Table spoon Sugar



Method :-

Remove the stem of Strawberries.



Turn on the gas,
Add strawberries and sugar in sauce pan.
Cover with lid and cook it on low gas for 15-20 minutes.

Strawberry become watery and soft . Mash it with masher lightly.

(You don't need to add water)










Turn off the gas. Let it be cool for some time.

Now blend in a blender.
Your Strawberry crush is ready .

Pour the crush into a clean container and use it for longer period of time ...

Cutlates/Patties from left-over Khichdi





Are you among those who don't like to waste food? and also you and your family don't want to eat again same thing.....then

What can be a option...
Since Khichdi is very healthy but we can't eat same thing again and again at a same day...
So lets make something delicious from the leftovers...
Veggies Khichdi cutlates....

They are yummy in taste and definitely healthy because we are using khichdi and veggies...

So great idea of using left overs and make some healthy snacks
 Here I have unique and appetizing recipe from leftovers..
If you made Khichdi for your lunch , so try this yummy snacks for your family at tea  time....
Trust me ....your family won't be able to identify that these cutlates made from left over khichdi ....:)










I have  some left over Khichdi(Moong dal & Rice)  and some mix vegetable.
Here is the recipe ...













Ingredients

About 11/2 cup Left over Khichdi
About 1 cup Left over dry Sabji
Salt to taste
1 tbsp Maggi masala/kitchen king masala/chaat masala or as per taste
1/4 cup corn starch or as needed
2 tbsp or as needed Sesame seeds
1 tsp green chili paste
Handful finely chopped cilantro
1/2 cup Bread crumbs or as needed

Oil for greasing/cooking



Method


In a bowl , add Khichdi and dry vegetable mix.

**If you don't have any left over cooked dry vegetable, so you can add boiled potato , peas , carrots or any vegetable of your choice

**Since I had some left over dry mix vegetable (combination of brinjal, Squash, bottle gourd, peas, potato and tomato).

**if you have vegetable khichdi or any type of khichdi then you can make cutlates ...

**If you have any cooked watery vegetable you can also use it , ..just cook it on high gas until all water absorbs.



Mix and mash khichdi and vegetables together.


(If your khichdi and vegetables are watery , so cook it until all water get absorbs).

Either you mash or blend in a blender.

Take out all mixture in a bowl.
Add corn starch, maggi masala, bread crumbs, chili paste, chopped cilantro and salt.

(You can add kitchen king masala )


Mix well.










Grease hand with oil and make patties as per your desire shape.

Heat the pan. Add 2 tbsp oil..

If pan medium heat then keep the patties and cook it on medium gas for 4-5 minutes. Then flip the patties and cook it more until they cooked brown in color and crispy.

You can coat patties from seasame seed. (This is optional).


                                          


Serve with green chutney or Sweet chutney or ketchup.

Mango Ice-cream




Everyone loves Mango & ice-cream ...
Mango ice-cream yields a delicious creamy dessert without eggs and ice-cream maker.
So here is a yummiest  and easiest mango-ice cream recipe.
Enjoy...


Ingredients

Heavy whipping cream 400 gm
Sweetened condense milk 200 gm
1 1/4 cup Mango puree
8-10 Mango small chunks (optional)



Method


In a bowl , beat the whipping cream from electric beater or hand beater for 4-5 minutes.

(Bowl, beater and cream should be chilled..)

In another bowl ,Add condense milk and mango puree together... Beat for 1-2 minutes or until mix well.
 

Then add whipping cream into mango puree batter and mix well.
Now taste this ice-cream batter , if you think that sugar is less, you can add  more  powdered sugar .

Add mango chunks.

Pour this to freezer safe bowl. Cover with lid or any plastic cling for 3-4 hrs or until set.



Cut into slices or scoop the ice-cream.

Enjoy this yummy treat with family and friends.

Eggless Mango cake

Eggless Mango cake , Super moist and yummy cake..
Best cake for tea time ..










Ingredients :-


Dry Ingredients

1 3/4 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt


Wet Ingredients

 200 gm condense milk
1/4 cup butter (room temperature)
1/2 cup olive oil
2 cup Mango puree
 1 tbsp lemon juice/

Parchment/wax/butter paper
Greasing pan/tray















 Method :-

 Preheat the oven at 350 F
Grease the tray with oil/butter and line with parchment paper

Take a large bowl, sieve all the dry ingredients together ...





In another bowl , add oil,butter and condense milk...Whisk the mixture for 6-8 minutes or until it become creamy. (You can use electric beater on high speed for 3-4 minutes)
 

 
Add Mango puree and beat it for 1-2 minutes or until it mixed well.


Combine dry mixture to the creamed mixture and mix well. Add lemon juice and mix well.

At this step if you think batter is thick so you can add luke warm milk as per needed.

Mix all things together until batter become smooth.



Pour or spoon batter into the prepared pan.













Tap the pan on counter to make sure batter is evenly distributed in the pan.




Place the pan in oven and bake it for 40-45 minutes.
Sometime time depend on the quality of oven. After 40 minutes you can check by tooth pick..
If tooth pick comes  out clean then cake is  ready otherwise put it in the oven for more 5 minutes or until tooth pick become clean or crumbled.
(My cake is ready in 45 minutes)

Once fully baked, take the cake out. Let is rest for 8-10 minutes.
Then carefully take it out and place on cooling rack....


 Let it be cooled and cut the slices and enjoy egg less and super moist cake..
 You can enjoy this cake with tea.



Note :-
1) If you feel that cake batter mixture is very thick before pouring into pan, then you can add milk of right consistency

2) You can add more sugar as per your taste.

3) You can add yellow color or saffron color for beautiful color in the cake.

4) Check cake after 40 minutes. and after every 5 minutes until cake become ready.

5) The taste of cake is depend also on mango, what type of Mango are you taking,
if its alphanso or kesariya or any sweet Indian Mango..it will give you great taste and color.

Vegetable Manchurian


Vegetable Manchurian is a great snack which is indo-chinese ..
It is made from vegetables fritters and sauted in sauce





Ingredients 

For Manchurian balls

1 tbsp oil
1/2 cup chopped Onion
2 tbsp  minced bell pepper
2 tbsp  minced cabbage
2 tbsp  minced carrot
3 tbsp Cornstarch
1/2 tsp salt
1/4 tsp black pepper powder
For sauce

1 tbsp soya sauce
3/4 tbsp red chili sauce
11/2 tbsp tomato ketchup
1/2 tsp vinegar
salt to taste
1/4 tsp back pepper
2 tbsp corn starch

Oil for deep fry







Method :-

In a bowl add all  ingredients which are mentioned in Manchurian balls except oil.
Mix well.
Greased your hand and prepare small round ball from the mixture.

Here are some points for deep frying.

1) (Keep the balls in fridge for 30 minutes )
Then deep fry

2) Oil should be medium hot

3) First put small ball in the oil and look , if its not spreading in oil then drop the balls for deep frying otherwise just coat with the corn flour and then deep fry.



Fry the balls on medium heat until it become golden and crispy.


Take out all balls on the absorbent paper.






For gravy

In a bowl add 2 tbsp corn starch in a 1/2 cup water
Heat one tbsp oil in a pan 
When oil is hot then add onion ..saute it for few seconds
then add bell pepper, cabbage & carrot and saute for few seconds...
Add salt and black pepper
in a bowl add soya sauce, ketch up , chilli sauce and mix well.
Add sauces mixture in the pan and saute for a minute.
Add  2 cups water . Bring mixture to boil over medium heat. Boil it for 2-3 minutes.
Add dissolved cornstarch mix into gravy. 
Mix well. Cook it for more 1-2 minutes.
Add Manchurian balls in to gravy and cook for 2-3 minutes more.





garnish with spring onion .
serve hot
