Blackeyed beans with vegetable salad is yummy and healthy with home made dressing.
Ingredients
11/2 cup boiled blackeyed beans
1 1/2 cup chopped lettuce
1/4 cup finely chopped zucchini
1/4 cup finely chopped bell pepper
1/4 cup finely chopped onion (optional)
1/4 cup finely chopped carrot
1/4 cup finely chopped tomato
1 tbsp salt
1/2 tsp black pepper powder
Dressing
1 tbsp lemon juice
1/2 tbsp extra virgin olive oil
11/2 tbsp yogurt or curd
1/2 tbsp honey
1 tsp roasted cumin powder
1/4 cup finely chopped cilantro
Method
Take a wok or kadai or any pan.. Add few drops of oil.
When wok is hot add zucchini, bell pepper, onion and carrot. Sauted for 1-2 minutes.(vegetables should be crunchy). Add salt and black pepper powder. Mix well.
Take a bowl
Add all dressing ingredients.Mix well.
Take another bowl
Add lettuce, black eyed beans, add sauted vegetables, add tomato and cilantro. Mix well. Add dressing and ciantro. Mix gently
Salad is ready. Enjoy very healthy salad recipe.
Tips:-
You can add more vegetable like broccoli, corns, peas, cabbage etc.
You can also add cheese.
If you like more sweet , you can add the quantity of honey
If you like cold salad then keep the salad in refrigerator for an hour.
you can add some peanut for crunchy flavor
You can make salad with any other beans like Kala chana, Kidney beans, sprouts etc.
