Lauki muthiya


One more healthy and delicious snack Lauki muthiya..
It is most popular snack from Gujarat ..



Lauki muthiya absorbs less oil and is made with steam. You can serve it in the morning as well as in the evening as a snack. 



Ingredients 

Knead the Flour 


1 1/2  cup Grated lauki (Bottled Gourd)
3/4 cup Wheat flour
1/2 cup Gram flour
1/2 cup Sooji (semolina)
1 tsp green chili paste
1/2 tsp ginger paste
11/2 tsp Sugar
1/4 tsp turmeric powder
Oil 1 tbsp
salt 1 tsp (or as per taste)
A pinch of baking soda




For tempering


2 tbsp oil
1 tsp Mustard seeds
1 tsp sesame seeds 
A pinch of kashmiri red chili powder (Optional)
salt as per taste
1 tbsp lemon juice
Finely chopped cilantro leaves




Method

Squeeze out the water from the grated lauki and keep it in a separate bowl.

Sieve the wheat flour, sooji , gram flour and baking soda in a bowl and put grated lauki and all the other ingredients mentioned above to knead the flour into it. Make a smooth dough from this mixture and leave it covered for 30 minutes. You can use the the squeezed out water of the lauki to knead the flour.
Apply oil on your hand and take a small portion of the dough. Make as many long round rolls from the dough as you can. Now its the time to cook the prepared Muthias.



     

  

Now prepare steamer, momo-maker or  idli stand to make muthiya. Fill water in the vessel and put the stand over it. Start keeping all the muthiya on the stand one by one and cover it with a lid. Steam the muthiya for about 30-35 minutes. Now put a fork inside the muthiya to check if it is properly steamed and cooked. If the fork comes out clean, then the muthiya is ready. Turn off the flame.

     
Let them cool down and then cut into thick small pieces. 

For tempering
Heat oil in a pan and then add mustard seeds, sesame  into it. Once the mustard seeds start cracking then add add Kashmiri red chili powder. salt, pieces of muthiya and mix well.
Add coriander leaves and mix gently. Cook it for 6-8 minutes on medium gas.
Turn off the gas. Add lemon juice. Mix well.
Lauki  Muthiya is ready. Serve it with green chutney.


















Tip :-

1) When your muthiya is ready after steaming, you can taste salt , sugar or any spices
so according to your taste you can adjust the quantity of spices in the tempering...
