Rava Vegetable Uttapam


Rava  Vegetable Uttapam include  rice , rava and lots of veggies. Batter of Rava Uttapam is same as Rava dosa.  You can also make Uttapam with left over idli or  dosa batter.





                                            


Ingredients :-

1 cup rice
1/2 cup Sooji or rava or semolina
1 tbsp salt
2 finely chopped green chili
1 tbsp ginger paste
1 tsp red chili powder
1 tsp mustard seed


Vegetables
1/2 cup grated or sliced cabbage
1/4 cup grated or sliced green bell pepper
1 sliced tomato
1 sliced onion
1/4 cup peas
1/4 cup finely chopped cilantro

Oil for cooking.
Water for batter ( as required)



Method:-

Soak rice for 4-5 hrs
Grind it in a grinder
Add sooji and mix it properly.

Add all spices and vegetables . Mix properly
Add the water slowly to make a smooth batter.
(like besan cheela or any cheela batter)

Add cilantro
Mix well.



Heat non-stick skillet and place on medium -high heat.
Sprikle few drops of oil , then Sprinkle a few drops of water .
Pour about 1/2 cup (or choice ) of the batter into the skillet and spread evenly with a back of spatula.
When batter starts to dry, gently spread one teaspoon of oil over it. Wait for few seconds and turn the Uttapam using a flat spatula.

Turn the Uttapam 2-3 times, until crisp and brown on both sides.










If you want litttle rich , so you can grate some paneer on the uttapam and then cook as above manner.



You can make different type of Uttapam as Onion Uttapam, Paneer Uttapam, etc


Uttapam is ready , enjoy with hot sambar and coconut chutney

Palakpaneermatar

Palak paneer matar is a yummy and easy to make recipe . 

This recipe is perfect for a occasion, when u have unexpected guests and you want to prepare something that tastes special but at the same time can be made fairly quickly.

For this recipe you don't need any blender, grinder or shredder. 

For this recipe you only need spinach , tomato , peas, paneer ( cheese ) and onion.












Ingredients 
11/2 cup washed and chopped Spinach
1 medium size finely chopped onion
2-3 medium size finely chopped tomatoes 
1 cup Peas (boiled or frozen)
1 green chili finely chopped
1 tsp ginger grated
1 tsp Kasoori Methi 
1 tsp cumin seed
1 cup paneer cubes.

Salt to taste 
1/2 tsp red chili powder 
1/4 tsp coriander powder 
1/4 tsp Garam masala
A pinch of turmeric
1 tbsp oil


1/4 cup Milk/Cream


Method  

Heat oil in a pan. Add cumin seed. When it cracks , add finely chopped onion, ginger and green chili.
Stir for 2-3 minutes.
Add peas and stir for 2-3 minutes.

Add finely chopped Tomatoes , salt, red chili powder, garam masala, and coriander powder.
Stir 4-5 minutes on medium gas.




Add finely chopped spinach.
Cover it for 3-4 minutes on medium gas.
Add paneer cubes and cook it for more 2-3 minutes. 
Add cream and mix well. Add kasoori methi and mix well.
Turn off the gas.
Now Palakpaneermatar is ready.







 You can add Sugar as per your taste.





Enjoy this with any chapati, parantha, naan or rice.

Note
1) You can adjust spices as per your taste.
2) To make it richer in taste , so you can add some fry cashew and cream . 
3) You can use fresh methi leaves instead of Kasoori methi  .

Potato basket chaat

Potato basket chaat is filled with various flavours as sweet, spicy, cruncy etc.. It is crispy from outside and soft from inside. Here I am presenting  healthy way of  Potato basket ........




For 4 basket

Ingredients:-

For basket

2 Medium size Potato
1 tsp salt
One table spoon oil

Stuffing 

1/4 cup Rajma (Kidney Beans)
1/4 cup Matra (White Peas)
1/4 cup Lobia ( eyebeans )
1/4 cup chola (kabuli chana)

Lemon juice

1 boiled and chopped Potato
Roasted Jeera
Red chili powder
Salt
Green chutney
Sweet chutney
Curd  (Yogurt)


Garnishing

Chaat masala
Any Namkin
( Pomegranate , coriander leaves)


Method:-

Soak Rajma, Matra , chola and Lobia overnight. Boiled all in cooker.
Keep it for cool down.
Add Potato and add  some salt , 1 tb red chili powder, 1 tb roasted jeera, 1 tb chaat Masala and lemon juice. Mix well.


Preheat oven on 360  Fahrenheit .
Peal the potato and shred the potato into shredder.
Wash well. Drain well.



Add salt and oil . mix well.

Grease muffin pan.
Spread the potato gently.

Keep it for 25 minutes in oven.



Tokris are ready.

Stuffing :-

Add 2-3 table spoon boiled Masala ( as per your taste )
Add 2 table spoon curd, 1 table spoon green chutney, 1 table spoon sweet chutney.
Sprinkle with chaat Masala and Namkin.

Samo rice Cutlates (Vrat ke chawal ke cutlates)

Enjoy Samo rice cutlates in Vrat.
You can eat them during any fast or any time.



Ingredients:-

1/2 cup Samo rice
1 boiled potato
2 tbsp roasted peanut powder
1 tbsp green chili and ginger paste
1/2 tbsp sendha salt (vrat ka namak)
1/2 tsp black pepper
1/2 cup finely chopped cilantro

oil or ghee for frying

Method :-

1) Grind  Samo rice in a grinder to make flour form

2) Mix rice  flour , potato, green chili paste, peanut powder, salt, black pepper and cilantro
3) Mix well and add 2 table spoon oil
4) Mix gently and make a smooth dough




5) Divide dough into equal pieces and make them shape whatever you want.
6) Now its time to deep frying until it become little brown and crispy.








Enjoy cutlates with curd or vrat ki chutney.

Oats Pancake (Oats cheela)

Oats pancake ...healthy......yummy..easy to make......
Enjoy delicious pancake or Oats ke cheela....






Ingredients:-
 1 cup oats     (In a grinder , grind oats and make powder out of it.)
1/4 cup grated Carrot
1/4 cup finely chopped  Bell-  Pepper /Capsicum/Shimla Mirch
1/4 cup finely chopped tomato
1/2 cup finely chopped Onion
1 tea spoon green chili and ginger paste

1 Tsp Salt or as per taste
1/4 tsp red chili powder
1/4 tsp coriander powder

1/4 cup finely chopped cilantro

chaat masala for Sprinkle
Oil for cooking.
Water for batter ( as required)

Method:-

Grind Oats in a grinder and make powder.


Take a bowl and mix Oats powder, all vegetables and spices (except chaat masala)

Add the water slowly to make a smooth batter.
(like besan cheela or any cheela batter)
Batter Should be in Pouring Consistency
Add cilantro
Mix well.

 
Heat non-stick skillet and place on medium -high heat.
Sprinkle few drops of oil , then Sprinkle a few drops of water .
Pour about 1/2 cup (or choice ) of the batter into the skillet and spread evenly with a back of spatula.
When batter starts to dry, gently spread one teaspoon of oil over it. Wait for few seconds and turn the cheela using a flat spatula.

Turn the cheela 2-3 times, until crisp and brown on both sides.










Your Healthy oats cheela is ready
Sprinkle chaat masala over the cheela.
Enjoy it with any chutney or sauce.

Note:-
1)  You can add more vegetables like zucchini, Spinach, cabbage, Squash , peas etc.
2)  You can adjust spices  as per your taste.

Hara-bhara kabab

Hara Bhara Kabab is easy to make . It is full of green vegetables.
Healthy recipe and delicious too....
Enjoy !!!!!





Ingredients:-

21/2 cup blanched and drained Spinach
1 cup blanched and drained Methi (fengrueek leaves)
1 cup Boiled Peas
1 boil Potato
3/4 cup peanuts powder

1 cup Cilantro Leaves
1/4 tbsp cumin seed
3/4 tbsp salt (or according to taste)
1-2 green chili
A small piece of ginger
1/4 tbsp Coriander Powder
1/4 tbsp Mango powder
A pinch of Hing ( Asafoetida )

Oil  for shallow fry



Method:-


Take a pan. Add 1 tbsp oil .
Add cumin seed and hing.
When cumin seeds cracks ,  add roughly chopped green chili and ginger.
Stir for few seconds.
Add Spinach, Fengrueek leaves, Methi, Potato, peas and Spices. Stir for 4-5 minutes.

Turn off the gas.
 











Cool it down for few minutes.
Blend the mixture in a blender and make a fine paste.



Add peanut powder. Mix well.


Take some oil on the palm and make balls and press gently.











Heat the pan or skillet (Tawa). Place the Kabab on the skillet on medium heat. Put some oil on the Kababs. Cook it for some time (2 minutes approx ) then turn them ..put some oil on it . And cook them. Turn again and again until kabab become golden brown and crispy.
Kababs should be cook on medium gas.
(it will take 15 -18 minutes approximately)






(Sprinkle some chaat masala on the kababs ...It increase the taste) (optional)

Enjoy these Kababs with any chutneys.

Notes:-
1) Breadcrumbs can also used instead of  Peanuts powder.

2) If you find that dough is sticky so you can use some corn flour for binding.

3) While blending don't add water.

4) You can adjust spices as per taste.

Raj Kachori

Raj Kachori is filled with various flavours as sweet, spicy, cruncy etc.. It is crispy from outside and soft from inside. Here I am presenting two ways one original and other one healthy ........






Ingredients:-

Dough

1 1/2 cup Sooji (Semolina)
1/2 tbsp salt      (as per taste)
3 tbsp oil
1 1/2  luke warm water or as required


Stuffing 

1/2 cup Rajma (Kidney Beans)
1/2 cup Matra (White Peas)
1/2 cup Lobia ( eyebeans )
(you can use chola, sprouts, peanuts any other stuffing)

Lemon juice

1 boiled and chopped Potato
Roasted Jeera
Red chili powder
Salt
Green chutney
Sweet chutney
Curd  (Yogurt)


Garnishing

Chaat masala
Any Namkin
( Pomegranate , coriander leaves)

Oil for frying
Method 

Soak Rajma, Matra and Lobia overnight. Boiled all in cooker.
Keep it for cool down.
Add Potato and add  some salt , 1 tb red chili powder, 1 tb roasted jeera, 1 tb chaat Masala and lemon juice. Mix well.

For Dough
Mix sooji, salt , oil and water . Knead the smooth dough.

First Method 

Dough is ready.
Heat oil in a Kadai
Make small ball (like puri) , roll it .
 

 


Put this Kachori into the pan and fry it in the oil.
Press the Kachodi so it rises well.
As soon as the kachori rises, lower down the flame and fry till it burns brown in color and crispy.
Preprare more. Let it cool down completely.


Second Method

Preheat the oven at 350 degree Celsius
Take any muffin pan.
In the above manner take a bowl and roll it.
Grease the pan.
Take the kachori and spread into muffin pan. Press it gently.
Keep it for 20-25 minutes in the oven .
Healthy kachori or tokri or canapes are ready.








Now the Kachoris are ready.
It is the time for stuffing.
We have ingredients for stuffing.
Break the kachori into middle.


Add 2-3 table spoon boiled Masala ( as per your taste )
Add 2 table spoon curd, 1 table spoon green chutney, 1 table spoon sweet chutney.
Sprinkle with chaat Masala and Namkin.

 







Note :-
1) You can use any thing for stuffing like sprouts, chola etc.
2) While rolling Kachori, it should be thin .
3) While frying Kachoris, it should be fry on low flame for crispy. Otherwise it will soggy like puri
4)  For Garnishing, ingredients can be modify as per taste.
