Eggless colorful thandai cake


Thandai, is an Indian cold drink prepared with a mixture of dryfruits, spices and some seeds. Here is the eggless cake with infused flavour of Thandai , which gives you a unique taste...
its very spongy, yummy and rich cake.











Ingredients :-


Dry Ingredients

2 1/4 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Wet Ingredients

1 tin or 396 gm condense milk  (you can add more 1/4 cup condense milk , if you like more sweet)
1/4 cup butter (room temperature)
1/2 cup olive oil
1/2 tsp vanilla essence/rose essence
3 tbsp thandai syrup + 1/2 cup milk
3/4 cup warm milk


 Method :-

 Preheat the oven at 350 F
Grease the tray with oil/butter and line with parchment paper




Take a large bowl, sieve all the dry ingredients together ...







Blend Thandai syrup with 1/2 cup milk .
(You can use here left over thandai also)



In another bowl , add oil,butter and condense milk...Whisk the mixture for 6-8 minutes or until it become creamy. (You can use electric beater on high speed for 3-4 minutes)

now add vanilla essence and thandai mixture and whisk/beat it for more 4 minutes..


Now add dry flour into wet ingredients..
Start adding dry flour mix and milk alternatively in 3 turns to this wet mixture.
Add 1 part of flour mix and 1/3 cup of milk to the wet mix and stir well.
Now add 2 part of flour mix and 1/3 cup of milk and stir well.
Add remaining part flour and milk and mix well.
Make sure that the ingredients of cake batter are well mixed.
 




























Now we have different food colors for colorful cake..
You can take any color as per your choice..
Here i have, red , green , blue, Orange and yellow color..
I have divided the batter into 6 parts ..5 for colorful cake batter and one for normal cake batter..







 













Now pour the cake batter one by one into greased pan according to your choice of colors.
Tap the pan on counter to make sure batter is evenly distributed in the pan.




Place the pan in oven and bake it for 40-45 minutes.
Sometime time depend on the quality of oven. After 40 minutes you can check by tooth pick..
If tooth pick comes  out clean then cake is  ready otherwise put it in the oven for more 5 minutes or until tooth pick become clean or crumbled.


Once fully baked, take the cake out. Let is rest for 8-10 minutes.
Then carefully take it out and place on cooling rack....

Let it be cooled and cut the slices and enjoy colorful Thandai cake..
 You can enjoy this cake with tea.



Note :-
1) If you feel that cake batter mixture is very thick before pouring into pan, then you can add milk of right consistency

2) You can make this cake from left over thandai too.

3) You can add some dryfruits as well  for making rich.

4) Check cake after 40 minutes. and after every 5 minutes until cake become ready.
