Khandvi (Microwave receipe)

Khandvi is a very famous Gujrati Snack .....

 


Ingredients:-

3/4 cup Gramflour (besan)
3/4 cup Yogurt (curd)
1 1/2 cup water
1/4 tsp Turmeric powder
A pinch of hing
1 tsp salt ( or as per taste)


For seasoning

3 tsp Oil
1/2 tsp mustard seed
1/2 tsp Sesame seed
2 green chili
1/4 tsp lemon juice
finely chopped cilantro
Curry leaves

Method:-

Take a microwave bowl....
Add Besan and curd ...Mix well till no lumps.
Add water ..Batter is ready ...
 

 


Now put the bowl in microwave for 2 minutes setting the highest temperature. After two minutes..take it out... Mix well








Now put it again in microwave for two minutes . Stir it again. It is becoming quite thick now.
Now put it again in microwave for 1-2 minutes . Mix well.. Remember it no lumps...


Mix salt and Turmeric powder and hing. Mix well
Spread it on the plate or foil gently and equally

 



I m using both plate and Foil
Then leave it for 10- 15 minutes for set
Now cut in to pieces and fold gently....

You can take help of knife while folding...






Now heat oil in  a pan....Add mustard seeds....when it cracks then add Seasame seed  After cracking it ....add green chili.....after 1 minutes ....add Curry leaves.....
Add lemon juice
Seasoning is ready (sry forget to take pic )


Now Put the seasoning  on the top of khandvi...
Garnish with cilantro

Enjoy Khandvi !!!!!!!!!!!!!!

Bhel Puri

Bhel puri...yummy snacks ...Everyone likes it......
At the time of rainy season.... bhelpuri, friends or family and cup of tea...mast 



For 6-7 persons
Ingredients:-

3 cup puffed rice (Kurmure)
1 boiled , peeled and chopped Potato
1 Tomato finely chopped
1 Onion finely chopped
1/2 cup finely chopped cilantro
1/2 cup Cucumber finely chopped
2 green chili finely chopped
salt to taste
3 table spoon Lemon juice
1/2 cup Peanuts
2 table spoon chaat masala
Puris (papri) 10-12
1/2 cup sev
Green chutney  (Mint or coriander )
Sweet chutney (Tamarind or mango powder)

Method:-

Take a bowl ...
Add Puffed rice , Potato, Tomato , onion , green chili, cumcumber ....Mix well
Add peanuts, add green chutney and sweet chutney(1/4 cup)
Mix well.....add lemon juice
Add salt, chaat masala
Add Puris and mixed well......
Garnish with sev and clintaro ...

Adjust spices or ingredients according to your taste.....

Fruit chaat......


Fruit chaat healthy...yummy.....recipe...
It can be enjoy during fasting or breakfast or snacks time.

For low calories lovers...this is the best recipe.....



Ingredients:

(Choice of your any fruits )

I like
1/2 cup Water melon chunks into small pieces
1 Mango
1 Apple
1 Pears
1 Guava
1/2 green Grapes or black or orange Grapes
1/4 cup Pineapple
1/4 cup cucumber
1/2 cup Pomegranate
1 banana

1/2 cup finely chopped cilantro leaves

1/2tsp Roasted black jeera (During fasting it is optional )
1  tsp black pepper
1  tsp salt  (During fast can use Sendha salt)
1 1/2 table spoon Black salt (During fasting it is optional )
1 1/2 table spoon Chaat masala (During fasting it is optional )

3 table spoon Lemon juice


Method:-

Cut all fruits into small chunks
Mix gently.
Add all spices and clintaro ...mix gently.

Add lemon juice .....Mix together ......

Your fruit chaat is ready.....

Enjoy fruit chaat.....edit fruits as per your choice or season....:)

Corn Tikki burger







Corn Tikki Burger ...

Ingredients

1 cup boiled corns
1 boiled potato
1-2 green chili
1/2 tsp ginger
Salt
1/4 tsp red chili
1/4 tsp Coriander
1/4 tsp chaat Masala
Finely chopped coriander

Oil for shallow fry

Pav for burger

Tomato and Cucumber for garnishing

Method:-

Mashed boiled corn and potatoes with hands.

Mix well and add all spices , coriander , chili & ginger except chaat masala
divide mixture into equal parts.

give any shape of your choice and make patties
Keep it between of the palms and press it .
Heat oil in a pan.


and shallow fry all patties.

Sprinkle chaat masala
Take Burger Pav Cut in to medium ....
Fist part of pav .....place tikki on it and cover with the other part of burger.
Grease the pav from the butter...and shallow fry from both sides.

Garnish with cucumber and Tomatao or choice of your veggies.
Serve hot with sauce or any chutney.


Enjoy corn patties burger.






Kaju Katli

Festive Time....
Sweets Time....
Kaju katli is the delicious sweet and easy to make. It can be eat during fast or during any festival ....
or any occassion ......enjoy kaju katli








Ingredients:
Cashew nuts 1 Cup
Water 1⁄4 Cup
Sugar 1⁄2 Cup   
Ghee 1-2 tbsp
Wax paper/plastic paper
1 tsp Eliachi powder (Cardamom) 
4-5 Saffron

Method:-
 





In a dry blender, add the cashews and blend into a powder.

In a big pan on medium gas , add water, sugar and bring it to a boil. Boil this mixture until it forms one thread consistency. (At least boil 5 minutes ......)
Then add Eliachi powder and Saffron  and boil for a minute.



Once done, add cashew powder. Mix well and stir continuously cook for 4 minutes till the mixture leaves the pan add ghee and keep stirring, turn off the gas and keep stirring more for couple of minutes, this is the sign that it reaches a thick consistency to make kaju katlis.


Take one bowl and pour the mixture in the bowl and set aside to let the mixtures dry completely.
After the mixture has dried, make the dough into a ball by putting ghee on the hand and make sure there are no cracks. 
Take wax paper .


Grease paper lightly  with ghee . Using a rolling pin, roll out the dough in a square or circle shape to form a quarter/one third inch thick flat dough. After 5 minutes ....take a pizza cutter or fork or knife and make diagonal cut or square cut.


Your Kaju katli is ready....


Tip :- if you want sweeter than use 3/4 cup sugar for one cup Kaju  powder.

1) What can be done with left over whey after making paneer......

-  Use in curry like Paneer, malai kofta etc. instead of water .
-  Use it in Plant.

- add some semolina  or bread crumbs or corn flour to make patties and  add green chili , cilantro . Make patties and coat with bread crumbs . and deep fry or shallow fry. eat crispy any yummy patties.

Methi Egg curry


Egg curry with little twist.....
here comes
 

For 3-4 person

Ingredients:-

3 tomato
1 onion
1-2 green chili
1 small piece of ginger
1/2 cup kasoori methi
11/4 cup water
1/4 tea spoon cumin seed
1 tea spoon red mirch powder
1/2 tea spoon garam masala
1/2 coriander powder

cilantro for garnishing
Salt to taste

2 Boiled egg

Method:-

Heat a pan .Add tomato, onion, green chili, ginger .
Stir for 8 minutes. Tomato puree is ready.


Keep aside for cool

Blend tomato puree in a blender.










Heat oil in a pan. Add cumin seed. When cumin seed cracks, Add all spices for a minute.
Add tomotao puree and stir for 5 minutes then add Kasoori methi. Stir for 5 minutes. Add water and stir for 15 minutes.



Take boiled egg. Cut in two piece . Sprinkle some red chili powder and salt.





Tomato curry is ready . Add some clintaro.
When you are going to eat then take gravy in a bowl and add boiled egg piece. Garnish with cilantro.

Sabudana khichdi (Vrat ki khichdi) or Tapioca


Sabudana Khichdi is a popular dish in India. It is often enjoyed during times of fasting.
It is a great breakfast or as a snack. It taste delicious and has many flavours as crunchy flavour from peanuts , spicy flavour from black pepper and sour flavour from lemon juice.



 



For 2-3 people
Ingredients:-
1 1/2 cup Sabudana or Tapioca
1/2 cup raw peanut
1 boiled Potato
1/4 cup finely chopped cilantro
11/2 tbsp Sendha salt (vrat ka salt ) ...(or can use also normal salt)
1/2 tsp black pepper
1 tbsp lemon juice
1/2 tbsp green chili ginger paste
1 1/2 tbsp oil or ghee


Method:-

Soak Tapioca for 6 hours. then gently wash and drain in the drainer.
 

Heat 1/4 tsp oil in a pan. Add raw peanut. Roast for 4-5 minutes or until they are lightly brown .
Keep aside.

Heat the oil in a pan (or can use same pan ). 
Add green chili ginger paste. stir for 30 seconds.
Cut the boiled potato in to cubes. Add potato in the pan and stir for 2 minutes.

Add the drained sabudana (tapioca) and stir fry for 5-6 minutes.
Add salt, black pepper and mix well. 
Add peanuts , lemon juice and cilantro and stir gently.


Serve hot. Enjoy your khicdi


Tips:-

1) Wash sabudana gently like they don't stick to each other.
2) If you think that sabudana is not tender so sprinkle some water while stiring.
3) If you are not making for fast so you can add cumin seed , asofetida, peas or normal salt.
